Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

I will definately look for chai in tea bag form from now on. I purchased a product called Oregon chai, which turned out to be a powdered mix with 130 calories and loaded with sugar.

I did an experiement recently. We don't have Whole Foods where I live. My local organic supermarket sold me Baja shrimp from Baja Mexico. I purchased shrimp from Walmart, the package claims the product is from India! How can that be possible, India is on the opposite side of the globe from here! Idon't believe the label that this raw shrimp originated from the other side of the globe, India. What do you think?

where's @jakedduck1 ? I bet he's the guy who broke the server, are you receiving emails from hubapplication too? 🙂 or maybe it was @lioness ?

@Erinmfs No wasn't me but I did receive an email from social security didn't even open it up as they only use snail mail So scams are rampant now Be careful

Who’s got a great recipe that takes 5 minutes, doesn’t have a lot of ingredients, little clean up, can’t be fried, I’m getting tired of cereal and sandwiches any ideas???

Frozen tortellini
Swanson’s chicken broth
Frozen peas
Boil water and tortellini
When almost cooked, drain add broth to tortellini. Heat and cook tortellini then add frozen peas. Heat and serve with grated Parmesan cheese.

This sounds good but I was thinking it was would be a bit high in sodium then remembered there is sodium free broth. Glad you posted it although looking forward to eating it, cooking it is another very unpleasant matter. My friend doesn’t leave until Monday or so. Maybe she will fix it. Hope hangs eternal.

I tried something new and found it to be quite yummy, easy to fix and no mess to clean up. Plums are starting to come into season as well as apples. I cut and cored 1 tart apple and cut it into small chunks, then I did the same with a black plum. I placed both in aluminum foil with a healthy sprinkling of cinnamon and also a few raw cranberries as I like the sweet and tart thing. I baked this for 1 hour in a 350 degree oven then turned the oven off and allowed the fruits to remain for another 30 minutes or so. I added no sugar or extra sweetener. I found this combination to be a real taste treat!! Leaving the peelings on of course as the pectin formed a sticky, sweet glaze.

Good morning. I just came across a rice made with vegetables! It's called Right Rice. There are several flavors but I'm going to try and get the original, made with vegetables. Dave's gone shopping. The air is terrible and very very humid so I have to stay home.

@merpreb Air in these here parts isn't so great right now either. Thankful for my little habitat and AC. I do keep fresh water out several times a day for our feathered friends. I even freeze water bottles and place in the bird bath. They love it!!!

@imallers and all HEAT WE had a Dr. talk with us yesterday about staying cool . Hydrate more then usual as you are sweating also drink Smartwater or the like to replace your electrolytes, ICE under armpits,groin,behind knees and put your feet on the ice this will cool the whole body of course she said stay indoors with a.c. on wear light colored clothing. Know your medication some will be effected maybe by heat Have someone check on you Avoid strenuous activity,alcohol,caffeine. These where the Dr,s suggestions just passing on .

Good morning everyone. I don't know about any of you but it is very very hot and humid to day (and the air has a lot of pollutants too.
Roasted Vegetable Couscous
Roasted Vegetable Couscous is an easy side dish with complex flavor, with sweet roasted vegetables mixed with savory, fluffy couscous.

Prep Time: 10 mins
Cook Time: 45 mins
Total Time: 55 mins
Servings: about 1 cup each
Ingredients

4 Roma tomatoes ($1.69)
2 zucchini ($1.23)
1 bell pepper ($1.00)
1 red onion ($0.69)
4 cloves garlic ($0.24)
2 Tbsp olive oil ($0.32)
2 pinches salt and pepper ($0.05)
2 cups couscous ($1.97)
3 cups vegetable broth ($0.39)
1/4 bunch parsley ($0.24)

Instructions

Preheat the oven to 400ºF. Wash and chop the tomatoes, zucchini, bell pepper, and red onion into 1 to 1.5-inch pieces. Peel four cloves of garlic but leave them whole.
Toss the chopped vegetables and garlic with 2 Tbsp of olive oil. Spread them out on a baking sheet so they are in a single layer. Sprinkle a couple pinches of salt and pepper over the vegetables
Place the vegetables in the oven and roast at 400ºF for about 45 minutes, stirring twice throughout, until the vegetables are wilted and browned on the edges.
While the vegetables are roasting, cook the couscous. Add the vegetable broth to a sauce pot, place a lid on top, and bring to a boil over high heat. Once boiling, add the couscous, turn off the heat, and cover the pot with the lid once again. Let the couscous sit, undisturbed, for ten minutes. Then, fluff with a fork.
After the vegetables are finished roasting, collect the four garlic cloves, and chop them well. They will be quite soft. Also roughly chop the fresh parsley.
Combine the couscous, roasted vegetables (including garlic), and parsley in a bowl, and stir to combine. Season with more salt and pepper if desired. Serve warm or cold!
