Recipes, Food Tips, Healthy Eating & More

Posted by Debbra Williams, Alumna Mentor @debbraw, Feb 22, 2019

Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

Hi there,
That certainly is a vicious looking device, it looks like it’s out to kill. That was thoughtful of you to further educate me however the kitchen is the last place I wanna be educated about.
Would that thing work to slice an onion so you could make homemade onion rings? Don’t get the idea that I’m gonna be making them though. I have someone coming to stay with me who’s going to do the cooking so I’ll save it and show him and see what he thinks about it. I’ll eat the onion rings but I’m not gonna use it or wash it or put it away or touch it in anyway there’s absolutely no doubt whatsoever in my mind that if I did I would chop off every body part that I have and probably then some.
I thought what are these nuts doing running food against the strings of a mandolin.
Cooking bah humbug!!!!!

Relax, it's just a picture, @jakedduck1. I've never used one of these (probably a good thing), but it looks very helpful as I'm not one to stand and cut/chop or dice. It looks like @imallears, Mary, has used this and has some good advice. Thanks, Mary!!

@imallears and @jakeduck1, Move over, Jake! I may have to take your place in Florida. We don't have a Publix here but it sounds like something worth lobbying for. Talk about variety, convenience, good sales...what's not to like about that???? Yes, Imallears, I am very careful about buying cooked food too because never sure about the ingredients. Cooked rotisserie chicken is about the only bring home from our grocery.

@fiesty76 Virtually all cooked foods are high in sodium, as is most restaurant food. I have not been eating a lot of sodium for years and when I was a manager at an Inn here in town that had a renowned restaurant I even found that to be very noticeably salty for me. I too sometimes purchase rotisserie chicken, I like them because I get at least one dinner for the two of us out of one and then leftover chicken to put on top of luncheon salads.

Love it! And yes you can mandolin on onion. Mandolins come with a food guard so you don’t chop off a body part. Of course there is the old fashion way of using a good knife . If you are having someone stay who can cook they will know what the horrible device is. My advice to all is to wear a grating glove on the hand holding the veg or fruit.
I often use one but not always...depends on how many vegetables I am torturing.
Oh get real lol..we know you can cook ..somewhat...I bet you could melt chocolate to drizzle over ice cream.

My son in law, God bless him, is like you. He does everything but cook. He assembled a kitchen island for me but didn’t understand why I wanted more prep space. I bought a beautiful large heavy cutting board to put on the stainless top of the island. He said “Isn’t that defeating the purpose ?” I told him I don’t cut on my countertops...I use a cutting board on top. He didn’t look convinced. But he does all the laundry, landscaping, handyman stuff, electronics, wiring ,painting etc...he doesn’t need to cook.
He can just about microwave something but has to be told the number of minutes. I remember when he came over with a boil in the bag rice and a pot and said...”what do I do with this?” My daughter had written out the directions. When you don’t want to learn you just don’t.

When my mom died, my dad really wanted to learn cooking and he was delighted when things turned out right.

It’s okay, Leonard...you have your people who obviously love to help you.

I don’t even need to melt chocolate for ice cream. Chocolate already comes ready to just Pour on. But I prefer caramel sauce and Marshmallow on my ice cream. Besides I just crumble up a candy bar on top of it all and get my chocolate that way and then some whip cream in a few cherries and it’s good to go. How I miss the old days when I used to do that. I’m not allowed to have any of the good stuff anymore, although I do occasionally cheat and the only ice cream I ever have is an ice cream bar that is so tiny you almost need an electron microscope to see it. But having ice cream at all is a very very rare treat. I did go a little overboard yesterday on a freak candy binge, white chocolate M&M’s, Reese’s, Milky Way, Carmel’s, a payday and a small bag of gummy bears along with a couple cookies. Obviously I was much happier yesterday than today. A few days ago I told my friend for my next birthday party the only food allowed would be from one of the five food groups, Cakes, cookies, pies, candy & pastry.
Mary, your son-in-law sounds more like a slave. He does the laundry too? Another chore I resent. He & I should send it out. Maybe I should become a nudist. The rice story made laugh! Even I can make rice, maybe not always successfully but I eat it anyway. Just don’t ever make brown Spanish rice. My mom tried it. I threw rice pan and all away. It was horrible, probably worse than any concoction you ever created. You come up with some dillies too.
Take care of yourself now and try to start to eat a little more normally,
Jake

You will be happy to know I am having a T Bone tonight with my famous Tuscon Kale salad and a Baked Potato.
There will be enough for 2 meals. My son in law can be compulsive and he likes doing laundry and all around him in good order. Have at it as my daughter says. He is dangerous to send food shopping though, even for a few items, we often have to give him pictures with explicit instructions. My son, who is a supreme cook, loves to cook and slice and dice and also loves to shop in food stores, I enjoy going with him as we go from store to store and different ethnic markets. My daughter in law just shakes her head. He could fill a trailer with his spices and seasonings. My daughter is the same way and, since she is keeping my family healthy and well fed, they are a good couple .
One of the best things my son in law makes is smoked bourbon old fashions. He will even zest an orange peel for that.

I can’t wait for dinner. The only seasoning I use is Himalayan salt and fresh ground pepper for the steak.

You’re talking to me about eating normally after all that candy you devoured?
Binging is okay once in a blue moon but you know that. All that sweetness made you endorphins surge ...that’s why you were so happy.

You take care too and enjoy time with your cooking friend.

@imallears I am so thankful for our Publix and the pre cut veggies at this point. I was using my mandoline veggie slicer two days ago and landed myself in the ER with the top of my index finger chopped off. No more slicing and dicing for me for a while!

@jakedduck1 Leonard, I want to answer your quiz, but I will leave it for @imallears !

@amandaburnett I took a huge swing at a spaghetti squash and cut the tip of my index finger off too! it was just a small slice and is almost healed now but it bled for six hours. My husband wanted to take me to the ER but the wait is always so long that I couldn't be bothered.

With the swing I took, I am very lucky to not have cut it further down, I seriously would have chopped a good piece of my finger off. Lesson learned.

@contentandwell, Hi, JK, yes, after I really started restricting and limiting salt in my diet, I soon started finding most restaurant meals too salty. I eat most salads without salad dressings and rinse many canned foods as well. The same thing occurred when I reduced the amount of sugar in my diet. Suddenly, those luscious iced cakes and some candies were just too sweet. Our bodies can adjust but always having a sweet tooth, I never expected the day to come when anything would taste too sweet for me.

@hopeful33250 I love slicing vegetables in my food processor. Granted, it does not make perfect slices but it's a heck of a lot easier than doing it by hand. I just cut up a bunch of peppers for tonight's dinner. As I commented in an earlier post, I took a slice out of my fingertip a couple of weeks ago so it's a good thing I have the food processor.

I just had an appointment with a new PCP (finally) this week. One of the questions on the pre-appointment questionnaire was if I work with hazardous equipment. I almost said yes, kitchen knives.

@jakedduck1 I am drooling thinking of ice cream with caramel sauce and marshmallow sauce -- I wouldn't object to fudge sauce either but when I was a migraine sufferer chocolate was one of my triggers so I turned to butterscotch. When we were children and went to Boston to shop my mother would treat us to an ice cream shoppe there that made wonderful sundaes. They were served in silver bowls on silver trays to catch the sauce and the marshmallow run-over. Those were the days, I have such fond memories of them. Of course we always wore our little white gloves when we went to Boston too!

Now it seems so I am on a perpetual diet, especially now to lose my pandemic pounds. I still love ice cream but am lactose intolerant now. Sure, there are lactose-free ice creams, but how good could they be? Would they really be worth the calories?

@fiesty76 When I remember, I sometimes bring salad dressing to restaurants. They sell little containers just for that! You can also do plain old vinegar and oil too of course. I always check the nutrition labels on food for sodium and sugar. There are some good salad dressings that have low sodium. Whole Foods make some and so does Litehouse. Braswell's has low salt in a couple of their dressings but the sugar content is high.

Cut? Heck with with that nonsense. I bought a big bag of sliced peppers last night at the store. All colors . Granted it may cost more but you might save a finger two.
