Recipes, Food Tips, Healthy Eating & More

Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

Thanks Merry but prepared foods not allowed either. I’d like to go out for a glorious steak dinner with a monster baked potato with globs of butter, sour cream, chives and cheese also some asparagus smothered in cheese sauce and a Dr Pepper. Then stop by the cheesecake kitchen for dessert. It’s been over a year since I’ve gone out for a decent meal. After all it is my birthday. But my doctor would squawk big time. Oh well, the fantasy was nice while it lasted.

Happy Birthday, Jake.
Are you from a tradition of big birthday celebrations, or from a lower key kind of tradition? I remember that on our birthdays were able to choose what we wanted for dinner on our day.
With your limited food options, can you eat apples? I have a suggestion to go along with the foil meal – try a baked apple (in its own foil packet) Peel, core or slice to your specifications. sprinkle with cinnamon, and optional honey or brown sugar. Wrap and bake. Yum!

@jakedduck1 Depends on how thick your chicken is . Most vegies take about 20 minutes to get soft so your chicken should also but again depends on how thick it is I think you are probably o.k. if when you take them out of oven cut your chicken in halve and see if it is still pink put in for a few minutes more. Just the chicken

Oh Rosemary such ugly 4 letter words.
Cook, bake, peel, core, wrap etc.
Usually go out with family and a couple friends or a friend invites me over for dinner before my doctor put a stop to eating out.
My Mom says she gave us whatever too but I have no childhood memories of it.
I love apples, even have an apple tree. East at least 1 a day. Love fruit and Mellons. I prefer now that birthdays come and go unnoticed.

@got a card with a candle and a balloon in it. I have the balloon filled with water, now waiting for my brother to show up, then whammo, splat then run and hide.
Got another card with a picture of a huge container ship and it says “Your candles are here”

@Jake- No one can force you to cook. You have gotten sympathetic support and recipes and recipe and food suggestions. So what will you chose to do?

I have to force myself but I’ll do it kicking and screaming all the way.

@jakedduck1 Are you one of those couch potato chefs?? Sounds to me like you have an aversion to things requiring effort.

@JAke- go out and buy prepared meals form your grocery store. You will make yourself sick and wind up in trouble if you don't eat a balanced diet.

@merpreb @jakedduck1 That can be a great idea as long as you are not sodium restricted. Prepared foods are generally very high in sodium. We went out to eat last night to a restaurant that has nutrition online. Basically, everything had more than 2000 mg of sodium, some dinners as high as 3000 mg. I try to keep my sodium to 1500 mg a day! My only option was a small steak, unseasoned. It was not a restaurant that you would normally get a steak at, it's an Italian restaurant! I would have loved some eggplant parm.

I agree- I thought of that after I posted. There are vegetarian restaurants or stores around that do not put a lot of sodium in their foods at all. Jake – do you drive? Perhaps you could google a few and see what you find.

@jakedduck1 Jake, your dream dinner sounds good to me. Can you have steak? We generally have beef once a week. I rarely eat starches, so baked potatoes are a Godsend to prepare for my husband, either that or a yummy roll.

I hope you have a great birthday, and that you have something to eat that you do enjoy. Does your doctor allow a very occasional splurge, if the splurge is not too bad? A small steak with a plain baked potato doesn't sound too bad to me. Forget the sour cream, the cheesecake, and all though. I can't remember the last time I had cheesecake.
My husband is in incredible health and eats whaever he wants. It's tough preparing dinner for him when I can't eat many of the things that he eats. He is reasonably trim, takes no medications and goes to the gym about 3 days a week. He's 83 so that's pretty darned good. Most people think he's in his late 60s, early 70s. He has great genes. I do not.

Jake- Than just do it. Taking care of yourself is upmost important- you know this! You mention that you can't eat a lot of things because you have a limited diet for health reasons and you doctor will get angry with you. Well I'm going to call him and tell him that you aren't eating well! Now do what it takes to make yourself feel good, get out of the house and look for healthy food. It's out there, and you know it! 🙂

@contentandwell So true about salt being high in so many things. It is a challenge. @jakedduck1 A salt restricted way of eating is another thing that those nasty people that care about you have taken away. It sucks to be you right now. Please do not cop an attitude and eliminate salt entirely as that can really mess you up. You can do this. I will tolerate you murmuring and complaining as it is your birthday. 🎁
