Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

Hi,

I usually use 400 for roasting beets...time does depend on size and sometimes you have to leave one in longer. I am thinking about 45 minutes is the average....take out and poke for tenderness but then put an extra layer of foil around the beet if putting back in the oven.....if not I invariably have leaking beet juice. I don’t take the skins off until I use them and then I use disposable plastic gloves. I have only cooked the red beets not the golden ones...don’t know why.

Thank you @marjou. How do you cook the beets? I never thought about how many nutrients are in the tops. @marjou, are beet tops bitter?

@jakedduck1 I cut the beets in half with skins on and add other veggies on hand like carrots, small potatoes, onions and place on aluminum foil ( create a pouch) with olive oil, a pat of butter and lemon juice. In toaster oven bake at 400-425 degrees for about 50 minutes (use timer) or until tender. Can season with Lawry's seasoning salt. The beet skins are easier to remove after they are cooked. Beets are tasty both hot or cold. Hope you enjoy

What do beets taste like, can you compare them to another food? I love pickled beets.

@imallears I love roasted beets. How long do you usually roast them and at what temperature (I know it probably depends on the size)?

Cut beets in half and add other veggies like baby carrots, small potatoes, onions bake in toaster oven 400-425 degrees for about 50 minutes in an aluminum pouch which steams veggies.

I get beets from local farmer's market and taste a bit sweet to me once roasted.

Funny, until my daughter lived with us, I never heard of eating beets cold, except in a summer salad. She buys them pre-cooked in shelf-stable pouches (Costco?) and adds them to the plate for any meal that looks a little short of vegetables or color. For example, baked sausage (no buns), coleslaw with apples and a side of beets makes a great meal. Spicy, sour & sweet.
@jakedduck1 - I would say beet are sweeter than cooked carrots, but unlike most other cooked roots, beets are "smooth" textured not mealy or mushy. I think with the color, sweetness & texture they are quite nice to eat - but I find the canned ones "blah" We also add them to fruit/veg smoothies.

@sueinmn Chocolate Balsamic vinegar? Really? There is such a thing? I love balsamic vinegar dressings. My son turned me on to a white balsamic vinegar dressing at Whole Foods and I love that one too. For a regular balsamic vinegar dressing, I like Litehouse. Wishbone used to have a lite Balsamic basil dressing but it does not seem to be available anymore.
