Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

I have noticed most younger people go to online recipes. I still have the old cook books. I have written down recipes over the years and these are in a notebook. Never did care for those recipe boxes. The May one day be appreciated or trashed. Matters not to me. 🙂

@merpreb Good morning girl. I enjoy playing with and being creative with food. I do know having to adhere to a soft diet without dairy, gluten or sugar is a challenge. Can get mundane at times. Thing is I have adapted without grumbling as it is part of what I do to have less inflammation and pain. It does make a difference. Aluminum foil has made things much easier too!!

@parus- Morning parus. Did you know that meat can be a bit cause of arthritic type pain too? There are sugar substitutes, can you take them?

@merpreb What kind of protein powder do you use? This sounds interesting.

@harriethodgson1 I am really looking forward to making your soup myself, maybe this week if it continues to be cool here. I love soup in the cool weather, and your recipe sounds so easy.

JK_ Any reputable brand. GNC has a good one. Go with soy if your stomach is acting up. There's all kinds of protein powder now for all sorts of diets

@merpreb I don’t miss the sugar and not interested in substitutes. I use a vegan protein powder which works well for me. There are so many options available now. Since I now sprout legumes and some grains I feel more satisfied. I am a vegetable person. Will admit I miss peppers. Cooking veggies
(Nightshade family) to soft without their losing color can be tricky. I don’t like colorless, mushy veggies. Eat lots of mushrooms too!!

@merpreb -- my daughter makes a salad that I really like that is great for lunches. It's probably pretty flexible for adding different veggies you like.

Alyssa’s Quinoa Salad
------------------
2 cups red, white or black quinoa (cooked according to package directions)
1 cup mango chunks (frozen and thawed is okay)
1 ½ cups black beans (drained and rinsed)
1 cup edamame, use frozen and cook according to package directions
1 whole red, yellow and orange pepper, diced
1 cup broccoli florets (steamed or raw)
½ cup cilantro, finely chopped
2 tablespoons rice wine vinegar
½ tablespoon olive oil
1 tablespoon Newman’s Own Lite Raspberry Walnut Vinaigrette
½ teaspoon salt
Ground black pepper to taste

Toss all ingredients in a large bowl and serve at room temperature or chilled.
Feel free to add more vegetables, such as yellow or orange peppers, or increase the amount of beans for added fiber and nutrients. This recipe is great served with grilled chicken or served alone, and works as a meal or side dish.

You said a mouthful Mary, “But that interest has to be there.” A lot of truth there. Although I use to actually enjoy cooking, more baking and candy making than main dishes. But I could slap together a pretty decent lasagna back when my cheese, salt and fat weren’t so limited. I have a question, is there anyway to cook hamburger for lasagna or stuffed bell peppers without frying it? My doctor insists I can’t have anything fried which is the main reason I’m looking forward to the air fryer. My friend came today and fixed me lunch and dinner and I froze some. Question 2, if I cook a steak (All 4 ounces) when do I add the potato and veggies?

You can brown ground beef in the oven for the peppers and lasagna...maybe 15 minutes. You don’t need meat in your lasagna. You don’t need to have meat all the time.
You can grill a hamburger patty or broil it in the oven. I’ve heard that you can brown ground meat by boiling it in water but I have never done or tasted that or think that I would try it. I like veggie burgers but only pan fried.
Not sure what you’re doing with the steak, potatoes and veggies. What are you making?

I have a few favorites that are great for lunch or dinner.
Taste of Home recipe for Black Beans with Brown Rice includes peppers, onions, canned tomatoes, apple cider vinegar. This is awesome.
Farro and Corn Salad from the Food Network uses corn, tomatoes, arugula, farro or barley.
Lentil Quinoa Salad from Melissa d’Arabian of the Food Network (I added peanuts and carrots)
Mayo Free Broccoli Salad with Honey Yogurt Dressing includes peas,onions,sunflower seeds,edamame, tomatoes.This is an awesome tasting salad from http://www.sugarfreemom.com. Add dressing before each serving to keep veggies crunch.

I toss chia and flaxseeds into salads or stews etc. Like grilled chicken leftovers over salads. Have flipped many a veggie burger for lunch with a side of avacado..no bun needed...or hard boiled egg.

If you are interested in trying these but can’t find the recipes I can post it for you.

Lunch can be a quandary sometimes...don’t forget your fruits.

Was just gonna have a steak for dinner with a baked potato or diced seasoned red potatoes and some asparagus using the air fryer but not sure when to put the potatoes and asparagus on the rack/dish or do they all need to be cooked separate?
