Recipes, Food Tips, Healthy Eating & More

Posted by Debbra Williams, Alumna Mentor @debbraw, Feb 22, 2019

Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

Hi @parus - Thanks for the pizza crust tip. I'd like to try that. It also reminded me of a recipe I LOVE and haven't made for awhile. I'll share it here...
Low Carb Cauliflower "Breadsticks"
1 bag of riced cauliflower
1/2 cup shredded mozzerella and another 3/4 cup mozerella
1/2 cup shaved parmesan
1 large egg
1/2 Tbls each: minced garlic, chopped basil, chopped parsley
1 tsp salt
1/2 tsp black pepper
Preheat oven to 425. Combine cauliflower, 1/2 cup of mozerella , parmesan, egg, garlic, basil, parsley, salt and pepper. Stir it until it holds together. Place the mixture on a lined baking sheet and spread it out in a 9 X 7 rectangle about 1/4" thick. Bake for 10 - 12 minutes. Remove from oven and top with the remaining 3/4 cup of mozerella. Return to oven and bake a few more minutes until cheese melts and starts to brown. Remove from oven and cool for 10 minutes then cut into "breadstick" size. You can eat this alone or serve it with red sauce. Yum!

@lioness It is paste like substance made from mashed chickpeas or another bean, mixed with tahini, garlic, and other spices. It is good with apples, or chips. Source of high protein. Good for you!

Hello @lioness

The description of hummus that @ginger gave is a good one. I only buy hummus at a good middle-eastern restaurant. I've found that the store bought brands are not as good. If you have a good middle-eastern restaurant in your neighborhood they will usually sell hummus with some fresh, warm pieces of pita bread right out of a wood oven. I've used hummus in place of mayo on sandwiches, on baked potatoes, any place where you need a little "spark" to a food. It is marvelous!

If you get a chance to try it, will you let me know what you think?

Hmmm, I don't eat avocados all that much. It is a problem for another diagnosis I have. You might have to check with an avid avocado user.

Hi hopeful

I eat avocados all the time, but only the Hass (smaller kind) The large ones that are not Hass are completely different. For breakfast I love to mash half a cado seasoned with S &P and spread it on sprouted wheat toast and then drizzle lightly some raw honey over it. Very filling. I also stuff them with tuna or salmon salad (canned). For stuffing I use the slightly bigger Hass which Sprouts carries only because you can get more in them. You can slice up in a salad or just put it on sandwiches or burgers. I have also grilled them lightly on a skillet and often have alongside eggs or diced right in scrambled eggs. Avacados need the s &p and garlic or onion salt as they don’t have much taste by themselves. I have mashed half mayo and half avacado to make a spread.

If you eat half an avacado, wrap the other half and refrigerate but eat the next day and just scrape off any brownish parts. I buy when on sale and refrigerate the ripe ones to last longer. I wash my cados in soapy water before cutting as they are really manhandled in the supermarket.

Regards from Mary and eat dem cados!

@parus and @lioness

Well, I just started Vestibular therapy. Here is how it went the first day (which was the evaluation). She explained that I have vertigo as well as something called nystagmus (that is where the eyes move a lot and you get a sore shoulder/neck from trying to keep your head/eyes quiet). (This explanation is mine, not a medical one of course so don't quote me to any medical professional.) .

The first exercise I was given was called "Standing Gaze Stabilization with Head Rotation." You move your head back and forth and then up and down keeping your eyes on your thumb (stationary) in front of you. The next one is called "Standing Gaze Stabilization with Head Nod." For this one, you are standing again with your thumb in front of you and nod your head up and down keeping your eyes focused on your thumb. The third one is "Seated Gaze Stabilization with Head Rotation and Horizontal Arm." The last one is called "Standing Gaze Stabilization with Head Nod and Vertical Arm Movement." I won't even begin to explain the last two, as I'm not really all that good at those yet. The day after I was very nauseous and called the doctor for some Zofran which helped a lot. Feel much better today. So, I'll keep with it. Let me know how you are doing, @lioness.

While avocados are great for many people, please note that they are not the best for anyone with kidney disease. Here is a list of dietary do's and don'ts for those with kidney disease, https://medlineplus.gov/ency/article/002442.htm

Hi ,

That’s interesting about avoiding certain veggies if there are kidney problems....would never think about avacados and spinach........still a lot of good stuff to eat though. Thanks for the info.
