New foods to try

Yesterday in the grocery store I found Breyer's vanilla ice cream made with oat milk. It's non-dairy and reasonably healthy. It does have sugar so you need to watch the serving portion which is 2/3 cup. Had some last night and it's very good - an enjoyable summertime treat.
Since the contaminated lettuce story was on the news, I have avoided buying lettuce. I was regularly making salads but have now been more selective about produce. Washing lettuce is too much of a pain.
So my fresh produce at dinner has been with home grown tomatoes, cucumbers or store bought celery and carrots. All much easier to wash.
Tomatoes - dice, add ground pepper and lite ranch dressing
Cucumbers - slice, add a little sugar, ground pepper, dill, lite sour cream
Carrot and celery sticks - whipped cream cheese with home grown diced chives

I'm still eating lettuce here in NJ. I buy the bags of chopped romaine and wash it first. I do a layered salad starting with a bed of chopped romaine, then a layer of shredded carrots, then chopped broccoli and cauliflower, then peas that have been very slightly cooked, then a little more chopped romaine, then shredded cheese, and halves of cherry tomatoes. The dressing is 1.5 cups of plant based mayonnaise mixed with 2 tablespoons of white vinegar, 1 tablespoon of sugar and 1/4-1/2 teaspoon of black pepper. The dressing is spread on top only. Sometimes I add diced red bell pepper. You can add or eliminate any veggies according to taste. You can even use vegan cheese substitute.

Breyer’s ice cream is my favorite ice cream. I usually buy the lactose free for my son who is lactose intolerant. Good know to know about the oat milk variety.
You can cut up your tomatoes, cucumber, with onions and serve with balsamic vinaigrette dressing and chopped parsley. Makes a good marinated salad.

I am suspect of any ice cream that uses "gums" such as Bryers does. Check the ingredients. There is a scientific link between gums and destruction or change in the gut microbiome. There is an anecdotal/hypothesis link of leaky gut and PMR Could damage of the microbiome and damage to the gut lining (mucosa) be hand in hand (??). Not sure but....... I am simply staying away from all that is not good for body. My mantra is "is it necessary" in the food (artificial additive, flavorings, and preservatives-- they are worse than ever in our foods. I used to think the 80s was bad for this stuff). I agree with all the unnecessary ingredients in our foods. I found breyers to be least added ingredients in commercial ice creams. In fact I thought they originally, or maybe still, had just cream and sugar varieties. I am lucky to live in Cincinnati where we have a home based brand, Graeters, which is all natural in most flavors.

@caroljeand .. So glad you have a homegrown brand. We do too and I live in a rural part of western CO. We have Third Bowl which is made just 12 miles down the road. I do not partake like the old days but about three times a year I have some. Amazing stuff. At least we know it is good stuff! I am not lactose intolerant, so I go for the real stuff, not oat or soy milk. but many cannot have dairy. I have had pretty decent luck with Hagen Das in terms of their "crap" content. Not a bad ice cream for commercial. I grew up eating ice cream overnight before bed. Coffee at that! I do not know how my pancreas survived the 60s and 70s. I am not diabetic nor overweight. Lucky me but I do have some issues. Oh well there goes perfection. Cheers.

I want to put a plug in for zucchini parmesan. Great way to use large quantities of zucchini. And it is that time of the year! Zukes are great for regularity. In addition, homegrown lettuce cannot be beat. I plant in successions and have it all summer. It is the only lettuce I eat. I forego it in the winter. Even the organic lettuce in the store is quite tough after eating your own garden grown. I am an avid gardener in western CO and have only missed a few garden seasons when in graduate school. I have had a garden since I was 6. That is almost 60 years with of gardens!

I admire your gardening skills. Growing up, we lived with my grandparents and my grandfather always had a garden. I particularly remember his lettuce and radishes. Tomatoes also. Parmesan zucchini is a good suggestion. I bought a small handheld spiralizer which easily makes zucchini spirals which saute in a few minutes. I like to cook with shallota. Sprinkle with some parsley and parmesan cheese -
appetizing and tastes good.
I generally do not buy onions, I like homegrown chives and buy shallots.
My husband built a plant stand for outside the kitchen door. Chives, basil, parsley and rosemary are always just a few steps awsy.

We buy Gotham Greens brand, greenhouse grown, pesticide free lettuce. No need to wash it. We like the butter lettuce but the romaine and the others are good, too.

And the taste is spectacular. Better than the lettuce I grew!
