What are your favorite healthy breakfasts to make?
I'm such a creature of habit when it comes to food/eating... since being diagnosed MM I've been home on short term disability and making all our meals. What are your favorite healthy breakfasts to make... need some new ideas! 😊

Buckwheat pancakes with potato starch olive oil and maple syrup are good gluten free and whole grain no white sugar!!
Yes! Leftovers! They make sense because if you ate it for dinner you can eat it for breakfast.
I grew up in my grandma’s house. There was always some sort of chile, green or red, or salsa. So, despite gut issues, it’s a habit that I don’t want to break. And, the “heat” can be adjusted. A dab of that will make the most boring scrambled eggs better.
I also have finally found a low carb tortilla that tastes good to me so quesadillas are easy and can be simple, just cheese and tortilla, or elaborate. Avocado makes just about anything better.
I’m not a cereal person but I do like oatmeal when there’s a chill in the air, sweetened with sweetener of choice and raisins and pecans or walnuts.
Breakfast was always my favorite meal when I had the time to enjoy it. Now I have the time but most days I don’t have much appetite, so like you, I open the fridge and see what might interest me. Sometimes that’s just low carb bread toasted with butter and no sugar jam or a piece of cheese.
I think we can take a lesson from the rest of the world that doesn’t just have eggs or cereals for breakfast.
I, of course, understand many people have dietary restrictions or conditions that require special diets. I was diagnosed with diverticulitis when I was 65. Who knew? The doctor told me then I needed to eat more fiber! I laughed at him and told him I learned to cook from my grandma and she was from New Mexico. My diet was loaded with the best fiber from beans and chiles and onions and all manner of peppers.
As I’ve aged I just don’t eat as much meat as I did and carbs in the form of white flour, white rice, etc. are definitely the enemy. Sometimes I forget how great a hard boiled egg can be with just a little s & p!
The fact is I still love to cook, although not daily, and I’ve discovered so many recipes and ideas on the internet that make me want to try things I’ve never thought of cooking.
Obviously, I’m not suggesting you eat things that are contraindicated by your particular situation.
