CKD Meals & Recipe Collection by Members
Hello All,
I am really getting bored with eating primarily veggies so much. There must be some easy recipes out there and if you have any I would so appreciate anything you can suggest or even a book with easy recipes. I did purchase a renal diet cookbook, but most of the meals needed too many ingredients and I am NOT a cook per se. HELP!

@nscappa, you're not alone. Finding CKD friendly meals and easy(!) recipes can be challenging. I took the liberty of modifying the title of this discussion to focus its purpose on sharing recipes and simple meals for people living with CKD.
I'll kick things off with sharing the cookbooks that @kamama94 has written and kindly shared PDFs of her draft versions.

Everyone, please note that the government changes recommended intakes every so often and manufacturers and producers frequently change ingredients and nutrient values. For instance, since I created the recipes in the pdf, the recommended intake for potassium for healthy adults has changed. I'm fairly sure other values have changed so be sure to read every label on every item even if you bought the same thing yesterday. Good luck!

Thanks for posting kamama’s collection! It is such a challenge.
@ldrlaw Yep, diet with Chronic Kidney Disease is a challenge. And if we are "lucky" enough to have additional issues, sleeving everything together to find something to eat is a job all by itself!
@kamama94 did a lot of work to create her files. Although she says the accepted values have changed recently, her information is still a great source, and helps take some of the guessing out. I for one am very grateful she shared them with the members here!

We just picked up a treat at Costco that is made in Canada. They are called Bombs and are dark chocolate with a nut topping that contains no sugars, no phosphorus and 160 mg of potassium for two pieces which equals 120 cal. I am not a dark chocolate fan but they aren’t too bad; if you are a dark chocolate fan you’re gonna love them.
@ldrlaw, I happen to like dark chocolate, including dark chocolate covered caramel bites Cocomels (vegan) and some of the non-dairy so delicious "ice creams" with chocolate. Also did some experimenting with Hershey's pure, 100% cacao.

Semi-Sweet Spoon Fudge*
103.6 cal 45.6 mg P 151.2 mg K 41.8 mg Na <1 Gm prtn
1 svg 51.8 cal 22.8 mg P 75.6 mg K 20.9 mg Na <0.5 Gm prtn
1 T cocoa** 10 cal 25 mg P (2% DV) 97 mg K (2% DV) 0 mg Na <1 Gm prtn
2T maple sugar 63.6 cal 0.6 mg P 49.2 mg K 1.8 mg Na 0 prtn
2 T organic almond mlk sweet creamer 30 cal 20? mg P <5 mg K 40 mg Na 0 prtn
Dissolve cocoa in 1 T hot water in sm bowl
Add maple sugar, stir well until dissolved, add creamer, stir well
Microcook til bubbly, stir til bubbles gone, let cool, do one or two more times
Pour into shallow lightly EVOO-sprayed dish, refrigerate
Warm Bittersweet Sauce*

Combine cocoa and maple sugar, add to microwarmed coconut milk, stir well
Pour over non-dairy frozen dessert or fruit, refrigerate remainder

Chocolate contains theobromides, good for humans, poison to dogs

Seriously, have been unable to post the newest bunch of recipes here because my replacement (refurb) pc for the one that crashed doesn't have what I need to convert to a pdf file. Unless someone can convert my word doc to pdf, I'll have to post excerpts a little at a time. Sigh.
