Recipes, Food Tips, Healthy Eating & More

Posted by Debbra Williams, Alumna Mentor @debbraw, Feb 22, 2019

Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

Ahh, @imallears, I'm with you on keeping and using canned salmon! But the greatest bonding is our shared delight is with sardines!! Poor, poor @jakedduck1 and @artist01 for not fully appreciating the satisfaction of both. Oh, well, just more for us, right?

One of my fond memories from childhood was returning home with my dad after doing the weekly grocery shopping and sharing a can of sardines and saltines with him. My mom Never joined in; in fact, she made herself scarce from the kitchen until our little treat was done. Thinking back, I wonder if she got her revenge on those Saturdays by serving the awful smelling turnips for dinner those nights????

Thanks, @gingerw, for alerting us all to National Pie Day! I didn't know to celebrate on the 14th but am making up for lost time now.

After challenging myself for days? weeks? to thoroughly clean inside of refrigerator before making another grocery visit, Friday, I made myself do the outrageous clean out. I was out of milk, bread and veggies so Saturday, I took self to early morning shopping.

In addition to the "necessaries", I managed to come home with frozen drumsticks, Klondike mint patties, and not one but two pies: Dutch apple pie and Key Lime....not saying they are my ultimate favorites because pecan, turtle, chocolate and coconut rank high as well, but oh, my goodness, what is not to like about any dessert pie????

When moving back to TX from MN, I made a lasting friendship with our Lutheran pastor and wife by serving them rhubarb pie on their first visit. Until those 2 yrs in Duluth, I'd never seen or tasted rhubarb. It is rare to find it available in our locale.

As for "healthy" pies, chicken pot pie, shepperd's and homemade chili/frito pies are pretty standard choices at my house.

@fiesty My feelings are hurt. What about my almond pie? Snicker, snicker.

@artist01, I am the only one in my clan who likes mincemeat. Later wondered if it is the rum? that is added??? Smiles
Like you, pecan pies are my most favorite and the one most requested by family.

At my daughter's one holiday, she'd bought some pecans at her grocers for my "special" pie. They were hard as rocks, tiny and almost bitter! From that experience, wherever she's lived, I annually send her fresh pecans bought from my area.

While our state is a big pecan producer, I have to rely on "store bought" walnuts and wonder if they too are far different from locally harvested fresh???

@fiesty76 My husband was the only one who liked mincemeat pie!
I had a huge walnut tree in my front yard when I lived in the Okanagan area of British Columbia. The walnuts were delicious but so much work in the Fall to harvest and clean. My next-door-neighbour always complained about my walnut tree's leaves blowing into her yard (!), and I was gracious enough to rake them up for her, even though she was 30 years younger than I.

@lioness, @fiesty, With regard to sauerkraut, I've just started on a Microbiome diet - eating fermented foods, I.e., sauerkraut, yogurt, cottage cheese, etc, and lots of fibre foods. My eldest son forwarded a medical research video on YouTube to me about how essential those foods are for a healthy gut. (Mine has been extremely unhealthy for many moons.)
My son has joined me in this, and is my coach! We make a good team, on long phone calls, since he lives in the Okanagan area of British Columbia, an eight hour trip away.

Oh wow...I remember my mom boiling turnip...horrible smell. But I do like turnip roasted with EVO and seasonings ......another whole ballgame....I use both white and golden yellow...they are small ones. @jakedduck1 would never approach a sardine because it is the whole intact but small fish. It would not be visually appealing and does have a unique but mild smell. We recycle and I really have to wash the can with soap and water before putting in the Paul. I admit it is an acquired taste and don’t know when I started to appreciate them. I prefer them in olive oil. Oh well, there are other Omega 3 foods to enjoy.

Back when we ate hot dogs it was always with sauerkraut and mustard....heavenly. But no more hot dogs and I don’t buy Kielbasa .I don’t think I would eat it with anything else though. Hot dogs and Nedicks Orange drink at Coney Island, NY. Even White Castle hamburgers when they first came out.....You could eat a dozen of those little square patties with the pickle. Yikes...back to the future. It’s corned beef and cabbage time with boiled potatoes! Then you can make bubble and squeak with the leftovers.
Happy St Pats Day.
For reference...Bubble and Squeak is just leftover corned beef, cabbage and potatoes all fried up in butter. Boy did we eat butter.I didn’t see a jar of Mayonnaise until I was in college. That’s why my sandwiches had nothing on the bread...was not a fan of mustard back then. And my family put butter on all their sandwiches.....

@jakedduck1 I agree with you and not such a great fan of dark chocolate but in the organic section of grocery store I found and tried dark chocolate covered cranberries which combo is not too bad. Just in case you want to venture out!
