Recipes, Food Tips, Healthy Eating & More

Posted by Debbra Williams, Alumna Mentor @debbraw, Feb 22, 2019

Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

@sueinmn Chocolate Balsamic vinegar? Really? There is such a thing? I love balsamic vinegar dressings. My son turned me on to a white balsamic vinegar dressing at Whole Foods and I love that one too. For a regular balsamic vinegar dressing, I like Litehouse. Wishbone used to have a lite Balsamic basil dressing but it does not seem to be available anymore.

Hi,
Welcome to the world of balsamic vinegar varieties. I have Middle Earth White Coconut Balsamic vinegar that I drizzle over strawberries or any fruit that is not as sweet as it should be. Some of the oils and vinegars I see in the small oil and vinegar stores are intriguing. You can sample and ask the best way to use them. I keep adding to my collection or get as gifts and half of one shelf in my pantry is vinegars and other condiments and another shelf is half full of assorted oils...some for cooking and some for drizzling. Kicks it up a notch.

Thanks kids,
Sweet huh, that's good enough for me. I don’t imagine they are chocolate sweet but sweet is sweet.
I'll go get some later in the Camry XLE I bought.
I almost got the Acura TLX(?)

Congrats on your new car, @jakedduck1. My faithful, best car ever, Suzuki Forenza turns 16 in March so I can "see" a new car in my future. Googled Camry XLE for photos and looks as though you'll be driving in style and I hope great comfort, too, as you take your spins while munching on your "chocolate of the day" !

Thanks fiesty, It’s an ok car but regret not getting the Lexus or Acura I was looking at. But I’d rather still have my Buick.
I went and got my carrots and beets, tops and all today. Will attempt to cook them for lunch today, no telling what they’ll taste like by the time I get done with them. It’s after 3am so better try to get a couple hours sleep, fingers crossed
Take care,
Jake

Hi,
Glad you got new wheels...be safe and enjoy your journeys.
I might suggest you sauté your beet tops separately...you may find them a little bitter. Use fresh garlic if you have it.....it wards off vampires too.😉 BTW I also loved pickled beets But roasted beets do not taste like that at all...still good though...I prefer mine cold or room temperature rather than hot. I’m sure you will let us know how things go.
Woke up at 42 degrees here this morning...bright sunshine...love it.

JK - Lots of specialty shops sell flavored balsamic vinegars and oils. We found one (pre-pandemic) in Gruene, Texas and stocked up because it keeps forever. We got dark balsamic with Mediterranean spices, Light with citrus, light with raspberry (also good on ice cream) dark chocolate and a few others. Adds a whole new taste to fruits, veggies, roasts...
I might be a snob, but I cannot but without tasting first because some don't taste very good to my palate, and in some shops, none have tasted good to me. I think there is great skill involved in crafting good ones. We are fortunate to have a cheese shop near us where we can taste before buying..

Hi,
Glad to hear from you...it’s been a while. Getting my second Covid injection on Feb.1. Hope we get to the point when we can say to ourselves...”whatever am I going to do with all these face masks?” I’m thinking Halloween will be very creative this year.

Stay safe in California.

My beets & carrots are FINALLY in the oven. I started at 2pm and put them in the oven at 4. I found out beets are loaded with oxalates which are mortal enemy’s to people susceptible to kidney stones. I read beet tops have more iron than spinach but the oxalates significantly reduce the iron absorbed.
50 minutes and not done yet. I’m not Job for Pete sake.

Enjoy your new ride! Actually, about as sweet as some of my daughter's favorite dark, dark chocolate.
Hey, that gives me an idea - I'm going to try chocolate balsamic vinegar on them next time!

@sueinmn
Dipping dark chocolate in castor oil would be an improvement, anything to kill the taste.
I get a few pieces of dark chocolate in the candy I buy but whenever I eat it I immediately have a milk chocolate chaser or two or three or.......?
