Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

Looking at Daily Digest saw a post of interest to do with having "itchy shins". Because I've begun noticing intermittent, short times of unexplained "itchy abdomen", I decided to try out the Google doc and found what I suspected that some foods and food groups can cause allergic reactions for some. These 2 sites provided more information and I will start the elimination of those specific foods that may be causing my periodic topical itchy skin: : https://www.livestrong.com/article/455116-what-kind-of-foods-can-cause-body-itching/

In my case, I had a large container of baby spinach delivered and to use more of it up before its going to waste, I began adding spinach to smoothies, stir frys, and casseroles. I'm pretty sure that is what caused this most recent irritation. Also glad to report that I've Never had an itchy reaction to sweets, just a craving for more, more, more! Smiles to all.

Driving home from an out of town bank, I got the courage to make a salad when I got home. I went in and thought some chicken would be good on that salad. Well I should know better than to think by now. But I FINALLY got the chicken finished and what a horrific experience it was. I started at 1pm it's after 4 & no salad.
i’m trying to figure out whether I should go ahead and try to throw a salad together or whether that would finish me off. maybe I should try fasting for the rest of the day. when I think of that vulgar C word starvation doesn’t seem quite so bad.

Good idea ! With everything going on and for me my taste changed so I am not enjoying good . I get nauseous everyday and I know if I don’t put something in I won’t be able to take my meds . So I work on not losing weight and if I am not getting much , that it is healthy and easy . The only foods that seem to taste like they should is fruit . So when I eat it’s for what I need . Could use some reminders of easy and getting nutrients I need .

My husband is three months past his last chemo and radiation treatment and he STILL can't stand the taste of any food. In fact,, it's gotten worse in the last three weeks! I'm at the end of my rope. I've tried every suggestion under the sun and can barely get anything into him. He drinks three Boost 20 gr protein drinks per day. I might have to push him up to four of them daily. They told us his taste would be messed up for about a month after treatment stopped. It's been three months and it's worse!

@jakedduck1 My suggestion is go for the salad without chicken but you might keep on hand some dried cranberries, avocado, and feta cheese to make it a little more tasty. Please do not despair!

Hi,
Spinach is a common culprit for some kind of allergic reaction. My daughter always got an itchy throat and lips when she was growing up whenever she tried to eat cooked spinach. I couldn’t eat fresh clams without the same reaction. Today neither of us have these reactions. Maybe it’s just the fact that you ate too much spinach and it may not have happened if you just ate it occasionally. I don’t know but I hope the itchiness went away. Too bad as fresh spinach is so versatile.
I don’t know anyone personally who is allergic to sweets lol.

What on earth kind of chicken did you buy and what did you do to it? Take the advice of @marjou and add the craisens , feta and avocado to the greens. Happens to be one of my favorite combos with chicken. You can put anything on a bed of mixed greens . If you can eat these, try canned tuna or canned salmon or cold sliced steak. A rotisserie chicken is good. You can add fresh fruit or even a grilled hamburger, nuts, hard boiled egg, garlic croutons, crumbled bacon. Sprinkle some flax seed or chia seed on top. Be adventurous. Honestly chop up a snickers bar if you want. And I am not kidding about the snickers bar. I crumbled up a half of a breakfast bar on top of my salad once. Just make sure you got your healthy veggies in there somewhere.

@jakedduck!, Hokay, our favorite candyman, how about this? Maybe pick up an already prepared rotisserie chickie the next time you are in a grocery? Or....I also keep canned chicken breast on hand for those spur-of-the-moment times when a chicken salad, or salad addition or quickie chicken soup sounds good...(Buy some jarred chicken flavored Better than Bouillon in the soup aisle for the broth) After opening, keep refrigerated; it is condensed and a little goes far. Boil some dry pasta noodles and when semi-soft, add whatever veggies..green onions, celery, chopped carrots, chicken to broth... And here's a quickie that I know you can master for an easy baked skinless lemon chicken breast: Spray baking dish with oil, mix together 1 Tablespoon fresh or bottled lemon zest with 1 Tablespoon virgin olive oil or melted butter or ghee; add a pinch of salt and pepper to taste. Bake at 450 for 15-20 minutes...Wallah! Will eagerly await the maestro's results!! You can do this Louie! Betcha' 3 choc. bars and two orange creams from the ice cream truck!

@imallears, Thanks for this information about spinach! My daughter broke out with patchy "rings" in her mouth as a child when eating strawberries. She loved them but they didn't love her and the humor of it was that she was red haired and strawberry was one of her several nicknames....Froggie was another but that is a story for another day...lol Bet Leonard, @jakedduck1, would agree that allergy to sweets not only don't exist but are virtually unconstitutional. Smiles

@imallears, I just read your post to jakedduck1 and am laughing because I was wondering the same thing! Leonard, did you buy a live chicken and then wring its neck and proceed to plucking it????? Never tried adding a chopped snickers bar to a salad but also did one time crumble up a granola bar for the added crunch...pretty good!

I cook my one bone in chicken breast at 450 also...10 minutes each side after seasoning and using spray acacado oil.
You can brine it for a half hour or so before if you want. Either way this method results in juicy chicken... never overcooked. I found it best
to bring the chicken to room temp before cooking and letting it rest for several minutes after cooking.
I always check with a food thermometer when I take out but it’s never been underdone.
And there was a time when I used canned chicken too in a pinch. It’s really tasty but I would have to look at the ingredients now on the can. I also use Better than Bouillon on occasion. Great minds. Just gotta watch the sodium.
But, like you said....so easy and quick.

FL Mary who has a 20 minute chicken breast in the oven right now....used some s and p and creole seasoning and this time I had time to brine with salt and sugar.
