Recipes, Food Tips, Healthy Eating & More

Posted by Debbra Williams, Alumna Mentor @debbraw, Feb 22, 2019

Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

@helenfrances, I'm laughing at your question mark! I have a sil doc in the family and at daughter's prodding, I told him of my stage 3 CKD diagnosis. He assured me that I wouldn't die from kidney disease... Well, now, how can he be sooo sure of that??? I'm not mentioning any health issues with him either. lol

That is like the neighbor who was affronted when I raised my face covering as she approached and said: "You don't need that! I don't have the virus!" My response, Better safe than sorry... I ask you, how could she Know she didn't have the virus???? Out everywhere without a mask; company in and out of her home frequently????

@helenfrances I, too, have next door neighbor that has young people from out of town in/out of house.

Yeah they are nice, sure beats a knife.
I just made some cashew chicken what a horrible awful miserable experience that was. I don’t know what got into me. I haven’t been feeling very good after my ordeal today. Mild headache that moves all around my head and dizzy. I’m still not convinced it was a seizure, after 13,000 seizures I’ve never had one like that before. The problem is once you’ve been diagnosed with epilepsy it seems like every bizarre thing is some kind of a seizure. It’s as though they don’t look any further or anything else.

@jakedduck1 I know the feeling, of being sloughed off because of one condition when it very definitely may not be related. I am sure with a diagnosis of epilepsy that happens a lot. Hopefully if what you experienced was a seizure it won't recur.

@helenfrances Sometimes it is best to not strain relationships with personal friends or relatives with medical questions. Our closest friend is a doctor but I have discovered that he thinks he knows more than he does when it gets outside of his specialty. I no longer ask him anything. He is going to be very offended when/if he discovers that I have changed doctors since he thinks the one I had been going to is the greatest. I really like that doctor but I feel as if he has let some issues fall through the cracks and that is not acceptable to me.

@fiesty76 I know what you mean about having the real thing. Ken's dressings (I think they are national but perhaps not, Ken's Steakhouse was in MA) makes a really good Greek dressing that but it has a lot of sodium so I no longer buy it. I like Caesar salads too but only get them occasionally in restaurants.

The new PCP is nice and I suspect a very good doctor. My appointment was a "new patient" visit and she spent over an hour with me going over my huge medical history. I doubt I will ever have the rapport and bond with her that I felt with my old PCP though. That was what kept me with him for a long time.

My prior PCP actually called on Thursday night and we talked for almost a half-hour! He took the blame for letting my osteoporosis fall through the cracks and said he understood my feelings. He also said if I ever want to come back he would welcome me -- he has a closed practice and does not generally accept new patients. It was a good conversation and as always we had some personal/family type of discussion too. He feels like a friend which made it very difficult to leave him. He always comments on how much he admires how I handled my cirrhosis and liver transplant, working to get in shape and lose weight prior to having the transplant and having such a positive attitude. He is sort of a fitness type of person - he has a good physique - so we always discuss my exercise too, things that are not generally on the agenda with a PCP appointment. He also asked who my new PCP was and when I told him he said she is excellent. Honestly, I will miss him!

@lioness I feel 100% certain that no matter what, they will not shut the country down, except to the countries that are not allowing us to go there.

@fiesty76 I use the little food processer my son got me long time ago for me now I agree it's so nice not to have to use a knife anymore ,my finger has come to close

@lioness, My Osterizer came with a second, much smaller container but in one move or another it got lost. I have to be very careful using the standing veggie shredder because more than once, I've scraped knuckles grating carrots. Eventually stuffed a new garden glove into the top of shredder to store with it. For sure, I'd do damage using a mandolin!

@contentandwell, JK, great news that your new pcp spent over an hour with you as a new patient. Starting anew after being with a pro for a long time is always a bit anxiety provoking for me.

Wonderful that your longtime PCP called and visited with you privately! Certainly speaks to how highly he values you not only as a patient but also that he was "big enough" to acknowledge he could have done a better job with your osteoporosis.

Sharing off topic personal interests is what I attribute to my close bonds with several docs...our grands, vacation spots, add another dimension and when making a change, that personal part of the relationship adds to the missing them.

Changing from my very personable cardiologist to a new, more formal one was particularly difficult but paid dividends for me. Sometimes, a change adds a new approach or perspective. On my first visit, he gave me two new diagnoses that set me on a new adventure and one that I might not have discovered otherwise.

A close friend once gifted me with a little pillow: "It takes a long time to make an old friend". So true but new ones can become cherished, too. Look at all the cyber friends made here at Connect ! Smiles

@lioness, I've heard that rumor also and for public health reasons, think it would certainly slow the pandemic spread but doubt that will be a serious consideration for the decision makers.

@fiesty76 I have found that my prior PCP has been very open about admitting things. It took a very long time for my non-alcoholic cirrhosis to be diagnosed. I was quite sure that the neurologist I went to because the HE episodes made my PCP think it was a neurologic problem was the person who suggested liver but my husband thought my PCP had diagnosed it so I asked him bluntly and he admitted that he had not diagnosed it.

I plan to have a physical with the new PCP. After that I will decide if I should stay with her or go back to my old PCP. I hope she will be good. I told my old PCP that she was more formal and he said that's typical for first appointments. I then reminded him that on my first appointment he brought me into his office to show me pictures of his children! We really did hit it off immediately and he has been through a lot with me. When I started going to Mass General for my care I discovered that he had looked up the doctors I went to there to check on them! I guess my heart is with him, but my brain is with her.

You will be happy to know I am having a T Bone tonight with my famous Tuscon Kale salad and a Baked Potato.
There will be enough for 2 meals. My son in law can be compulsive and he likes doing laundry and all around him in good order. Have at it as my daughter says. He is dangerous to send food shopping though, even for a few items, we often have to give him pictures with explicit instructions. My son, who is a supreme cook, loves to cook and slice and dice and also loves to shop in food stores, I enjoy going with him as we go from store to store and different ethnic markets. My daughter in law just shakes her head. He could fill a trailer with his spices and seasonings. My daughter is the same way and, since she is keeping my family healthy and well fed, they are a good couple .
One of the best things my son in law makes is smoked bourbon old fashions. He will even zest an orange peel for that.

I can’t wait for dinner. The only seasoning I use is Himalayan salt and fresh ground pepper for the steak.

You’re talking to me about eating normally after all that candy you devoured?
Binging is okay once in a blue moon but you know that. All that sweetness made you endorphins surge ...that’s why you were so happy.

You take care too and enjoy time with your cooking friend.

Your son sounds like a gourmet cook compared to me. If you asked me to make you a smoked old fashion I’d probably stick it in an old fashion glass and stick it in the oven until it smoked. Sorry about the orange zest but I don’t have the zest to zest an orange, whatever that is. A normal dinner at last and it sounds good too. Wish I was there to enjoy the other half. Not half of the old fashion though. I’ll let you savor all of that.
What could possibly be more normal than candy, ask any kid. I think everybody if they answered honestly will say that candy was as normal as it gets or at least one of the five best food groups, Candy, cookies, cakes, pies & pastries. That has to be as normal as normal can be.
I will enjoy time with my cooking friend that’s for sure as long as it’s not anywhere near the kitchen. Well I guess I better go get some cashew chicken that I slaved over last night, what a horrible awful experience that was. First time I used my new stove. Talk about a stupid thing to buy and a total waste of money. First time I used the stove in at least two months and I hope it at least twice that long before I use it again. I planned on just having some nuts for dinner and I had some but I was still hungry so foolishly I went in and fixed something. Next time I’ll go to bed hungry. I need to have my head examined or move in with you and then you would need your head examined.

Back again,
I have a question, what do you think the best cookware is? or at least something good. I should get some for the guy that’s coming to cook for me. I was thinking of “all clad” is that stuff any good?
