Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.
Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.
Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!
I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

I found a great recipe for Kale that was sooooo good I had to post. You should use Tuscan Kale and fresh lemon juice. The amount of lemon juice in the recipe is equivalent to a good size lemon.. The recipe was taken from True Food Cookbook. I have eaten it 3 days in a row as a side dish and gave my daughter the last little bowl.
KALE SALAD
1/2 cup EVO
1/4 cup freshly squeezed lemon juice
3 crushed garlic cloves
1/2 teaspoon salt
Pinch red pepper flakes (optional) but I used.
2 bunches of Tucson Kale (about 14 oz) ribs removed and cut into
1/4 inch shards
1;2 cup finely grated Parmigiana Reggiano (I used pre shredded and grated a good hunk)
2 tablespoon toasted croutons Crumbs (I used a tad more)
In a salad bowl whisk the oil, lemon juice, garlic and red pepper. Add the kale
And coat well and let stand for at least 30 minutes. Add the cheese and croutons crumbs
and toss again.
This is a salad that tastes even better the next day and the day after that.Kale holds up well over time even with the dressing.
Two bunches of Tuscan Kale ( or dinosaur kale or whatever it is called in your area) is not a lot
for one person. It is distinctive by its deep dark green color and is my choice over the
other curly kale. My garlic cloves were large but I love garlic. It also suggested shaving some good
Parm over the salad prior to serving. If it is just for you , the you don’t need to add the extra shaving.
For those of you who can eat this type of food...enjoy. I do not have any nutritional info. You can
plop a hamburger or roast piece of chicken over this for a great meal.
Remember...only Tuscan Kale.

Hello,
I am responding to your original post but am not giving you a recipe. Hope all is well with you. I was reminded of you when I was in our Publix supermarket last week. It seems they even have more pre cut veggies and fruit than ever before. Diced, sliced, chopped, spiralized etc. ...small bags of broccoli, cauliflower , carrots , other veggies which are great for one person. I like spaghetti squash but, if I don’t want a whole one, they have a half one with all the stuff scooped out. Even their Deli department offers cooked sliced chicken, beef stew (which I had once and is good), any kind of chicken, soups, salads, hard boiled eggs, quiches, meatballs, meatloaf, pot pies , stuffed cabbage. The prices are not bad on a lot of the items. You can literally shop and not have to prep anything or pick up any entree to heat up.
When Covid is over, you should pack up and move here....you would cry for joy when you go shopping . You can’t beat the precut food. I often buy a small bag of broccoli, cauliflower and carrots to roast whenI don’t want to buy the heads. I watch the sales. They have small salad bowls 3 for $10 quite often.
On the cooked food you have to watch the ingredients .

@imallears and @jakeduck1, Move over, Jake! I may have to take your place in Florida. We don't have a Publix here but it sounds like something worth lobbying for. Talk about variety, convenience, good sales...what's not to like about that???? Yes, Imallears, I am very careful about buying cooked food too because never sure about the ingredients. Cooked rotisserie chicken is about the only bring home from our grocery.

@imallears I am so thankful for our Publix and the pre cut veggies at this point. I was using my mandoline veggie slicer two days ago and landed myself in the ER with the top of my index finger chopped off. No more slicing and dicing for me for a while!

@imallears I have a mandolin and will hold off on using it! I did it with a dull knife slicing a bagel! Feel better
