Recipes, Food Tips, Healthy Eating & More

Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

@gingerw

@jakedduck1 I think you should be the one to try this recipe and get back to us. Alert the fire dept ahead of time, in case you overdo the sauce-making on the stove. This recipe sounds way too rich for me. Oh, and make extra sauce, so you have something to pour over your ice cream, or cookies, or sweet-of-the-hour ;))

@jakedduck1 I agree with @gingerw The recipe sounds outstanding but my arteries got clogged just reading it. I love caramel sauce, and butterscotch sauce, but have pretty much given them up.
@imallears is right, CA got on track earlier than many states. Unfortunately the governor in FL did not.

Since this whole isolation thing I have started using more of my dried goods. I sprout my own grains and legumes. Lentils are at the top of my legume list. I have incorporated my trusty crockpot. I have started playing with herbs and spices in combination with legumes and rice. Lots of protein and fiber. I had chicken broth which does enhance the flavor when cooking beans with rice. I did brown lentils with brown rice and cumin. I also baked a loaf of homemade french bread. Now it does not get much healthier than this!!!
BTW, I do have plenty of food just in case anyone is wondering or pitying me for such a meager meal.

It doesn't' sound meager at all, @parus. It sounds wonderfully delicious and healthy. As I've said before if I were your neighbor I'd be visiting in your kitchen on a regular basis.

Hi, @Parus, I am also experimenting with ways to "stretch" ingredients I have on hand. I've become much more of a "foodie" recipe trier sp? vbg over the past year. When Sams advertised a "special" on one of my favorite spices: Mrs. Dash, I made a list of the ingredients and was amazed to find that I had the majority of them! Created my own "salt free" seasoning and now using it liberally with dry legumes, pasta, soups, casseroles and omelets.

Anyone around for a little help?
I’m cooking believe it or not. I’m probably creating garbage actually but I usually eat what ever mess I I create.
I’m making some chicken breast (4) they’re good size ones And I’m wondering how long they should cook. I threw in some canned tomatoes and some salsa and some various spices
Thanks in advance

Hi @jakedduck1,

Are you putting them in the oven or cooking on the stovetop? If in the oven, will you be using an oven baking bag? How thick are they?

If you are baking them, here is some info from a website about the time and temperature.

The canned tomatoes and salsa sound good! What time is dinner being served?

@jakedduck1 Depends on how you are cooking them.
Crockpot, could take about 5 hrs. In the oven, in cooking bag, probably an he to 1.5 hrs. Cooking bag offers least amount of cleanup.
You could fix some rice, and put the tomatoes/salsa mix over that.
