Recipes, Food Tips, Healthy Eating & More

Posted by Debbra Williams, Alumna Mentor @debbraw, Feb 22, 2019

Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

I’m having iPad problems...That recipe is not my cup of tea. I don’t like to drown food in cheese and I don’t like the taste of canned cheese soup. I don’t use any canned soup for any recipes...honestly just not healthy. It tastes artificial because there are too many additives . That’s just me. Plus I don’t have a slow cooker but it looks easy enough for you. Do you own a slow cooker?

I have a slow cooker, goodness knows why. Lots of salt in that recipe too. Any ideas with not many ingredients? I’m not suppose to have much cheese, it just looked almost simple. I don’t normally use soup either except I dumped a couple cans of onion soup on a roast once and sometimes use dry Lipton soup mix in meatloaf.

Following your slow cooker guide I would use a low sodium chicken broth or bone broth in place of soup. The key is to season the breasts ...For example...4 breasts would take about 1/2 tsp salt, parsley, onion powder garlic powder and pinches of paprika,
and pepper. Add a plop of butter to the broth and swirl around. Really press those seasonings into the breast and then follow the directions for slow cooker.
I’ll see if I can find something for slow cooker pork chops.

There must be plenty of slow cooker users here. In thinking about your pork chops any recipe will require that you pan fry first.
My suggestion is to put together a seasoned flour mix (your choice of seasoning) , dredge the chops and shake off the excess flour but reserve the remaining flour and pan fry in a little olive oil briefly. Take the chops out and stir in the rest of the seasoned flour scrapping all the bits and pieces and cook the four for a minute .Then add in low sodium beef broth and mix up good. You can put the chops back in the pan and cover tightly and just let them simmer for an hour or two
or follow the slow cooker guide.
Either way you will have to pan fry them first. But if you are doing a whole package of either the chicken or the chops then you will have enough for a few dinners.
You will have a mess initially but the rest is reheat. I would buy a thick bone in chop next time. I season and flour mine and pan fry on high heat for a couple of minutes each side and it always turns out juicy...the key is doing it to a bone in chop. Boneless chops are dry especially if they are thin.
My one boneless chicken breast takes 20 minutes in a 450 degree oven....flipping once after 10 minutes. Again it has to be seasoned well and it is so juicy. I mix my seasonings on wax paper and cook the breast on parchment (or aluminum foil).

If you do buy large packs, freeze the individual pieces so you don’t have to cook the entire thing.

Don’t get mad at your freezer and be more mindful when you shop...yeah I know. If you could see the Aprons line that Publix here sells you would drool......already seasoned and you just have to cook. Their meatballs are decent for a quick meal and they have cooked pot roast for one...very reasonable. I often buy a prepared entree here and there if I’m not in the mood. We have a huge selection in many of the stores but you need to read the labels. And there are many outfits that prepare 3 or more meals a week ready to cook...everything is sliced and diced...recipe included with the right amount of seasonings and ingredients. Yup you’re paying for it but there are no additives and it’s fresh and delivered.

Okay I just had my dinner tonight...took about 15 minutes, 1 pan, 1 pot.

Meals on wheels stopped delivering here in July.
Problem with prepared foods is the salt. I don’t use any otherwise I’d be getting stuff from the deli or restaurants. I might look into those non cooked meals. Not my choice but probably easier than scratch as long as they have low sodium. Thank you for your suggestion.

OK.. you all... you got me thinking of pizza and I'm going to post a picture of my meal this past Saturday night. My son and daughter in law where here visiting from Colorado the he made dinner! Pesto sauce, mozzarella, spinach with garlic, sun-dried tomatoes and parmesan. I haven't eaten pizza in an age and it was delicious.

BTW @stuckonu - don't worry about reading 1400 posts! LOL. There are some good recipes on here but sometimes we just pull up chair at the kitchen table and chat in this group. It's a good place to hang out.

@debbraw The pizza looks delicious, and I’m very impressed that he knows how to throw it up in the air! I too made a pizza this weekend, the first time in years. Unfortunately the crust didn’t get cooked enough so we put the pieces back in the oven directly on the rack. It was OK but not up to the standards I set years ago when I used to make great deep dish pizzas. We called them “Super Bowl” pizzas because I always made them for game time dinner.

No more Meals on Wheels so I signed up for one of those other places but before you sign up it cost $7.99 per meal. After they get your credit card the prices jump up, way up. To over $20 a meal. You can get 6 chicken breasts, 2 New York steaks and 4 “FREE” burgers for $85.00. Isn’t that a bit high when some of it is QUOTE “FREE” UNQUOTE. I wonder how much it would cost if they didn’t include the “FREE” burgers?
I’m not a techie kind of guy. I think their website is confusing.
I canceled. At least I think I did???
I’ll look at some other sites. Any body have any suggestions?

My daughter signed up for and received meat and chicken from ButcherBlock.com. If you sign up in September you get 1 lb free ground beef for LIFE. She said the sirloin steak and chop meant were excellent. All grass fed food...they tell you when it will be delivered. Not sure if she had the chicken yet. Can cancel anytime and get automatic delivery if you want and pause your delivery if you are going away without using the free beef for life. Don’t know how long that promotion lasts but she is a foodie and loved the taste of the steaks and beef so far.
Worth a look to see the different meal plans and cost.

Hi Jake! Have you tried Mom’s Meals? They are located here in Ankeny Iowa and they have meals with dietary needs. We send these meals to my father-in-law and he loved them! Should check them out!
