Recipes, Food Tips, Healthy Eating & More

Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

Hi Debra,

This is such a fun forum. I like the detox cookbook....I’ll get back to you when I find out my daughters favorite.....She’s a nurse practioner who has her own business and is a provider in some ALFS in our area. Most of her patients are elderly with a host of medical problems including dementia. Recommendations about diet so often fall on deaf ears...theirs and their families. She had a deep interest in nutrition, as does my son who is an amazing cook. He doesn’t go the cookbook route but is an intuitive cook. They are both an inspiration in the way I approach food. He was bringing his own hand grated Parmesan to junior high on spaghetti day, and he’ll be turning 50 this year.

So people have to enjoy the whole process....the chopping and dicing etc. It doesn’t have to be a laborious effort. So many people who are cooking just for themselves think it’s easier or cheaper to get takeout or prepared foods. We know it’s not cheaper or healthier and cooking for one can be done in a jiffy. But,if the interest or motivation is not there, there are so many nutritional and healthy alternatives out there today. There is no excuse for not eating right. Your life depends on it.

Bon appetite ,
Mary

@parus The recipe sounded good to me. I don't know anything about red lentils but the idea of a stew sounds wonderful!

Hi Mary! @imallears - I am so glad you joined this group. I know I am certainly enjoying and benefiting from your love of cooking and your willingness to share. You said that you and your daughter like reading cookbooks. I do too! I'm in a caregivers support group for partners of people with dementia. There is one guy in the group who is very nice guy and he makes himself even more popular by bringing delicious and healthy snacks to eat at our meetings! He talks about food the way you do - healthy is a lifestyle that he has adopted not just a fad since he had to learn to cook. Last month, he suggested two cookbooks. Right away I put them on my list of gifts I want for birthday/holidays. I'll share them here in case you and your daughter haven't gotten to these yet:
~ Genius Foods by Max Lugavere https://www.goodreads.com/book/show/35008533-genius-foods
~ Detox Kitchen Bible by Lily Simpson https://www.goodreads.com/book/show/22929660-the-detox-kitchen-bible?ac=1&from_search=true
Please let me know if you have either of these or if there are others you particularly recommend. Other members, too! I'm always looking for suggestions. Some women think you can't have too many shoes - I believe you can't have too many cookbooks!

@debbraw It's one thing to have a cookbook or have people tell you about cookbooks and different ideas. When you're able to have the recipes actually fixed so you can taste test them it brings a whole different level of interest to the food and allows you to see the end result.

Thinking about lentils, I just saw this lentil recipe in a Mayo newsletter, "Recipes for Healthy Living." It is called Lentil Ragout.

Here is the link,https://www.mayoclinic.org/healthy-lifestyle/recipes/lentil-ragout/rcp-20197726?utm_source=newsletter&utm_medium=email&utm_campaign=recipes

@lioness that’s why when I have the time I like to poach whole breasts with bones. Great broth afterward. I like it especially in the cooler months, to just drink the broth or to make a simple chicken soup.

So much for the microwave. I’m cooking pork chops in a bag in the oven. The seasoning is good but 500mg sodium. Oh well, I guess I can stray once in awhile. Having broccoli and mashed potatoes. Potatoes aren’t very tasty without salt, butter and a dab of milk but I’ll find something to put on them. Maybe some malt. Any suggestions???

@jakedduck1 I don’t recall why you need to avoid dairy, but I have to avoid it now myself. A friend recommended “I can’t believe it’s not butter”, the vegan one. It has no dairy in it. Definitely not as good as butter, but better than nothing. You could try some unsweetened, plain almond milk. I pinch of salt might be ok but the less salt you use, the more you get used to it and then things with salt taste too salty. I use pepper and I think I will try Mrs. Dash.
