Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.
Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.
Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!
I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

@contentandwell Being able to share is a type of healing. I have always been better at giving than receiving. Can not go wrong with sugar cookies or nearly any kind of cookie.
@parus, With the avocado, added you get a lot of the healthy fats. Sounds good.
@parus Like others, I'd be tickled to be your neighbor! I'm trying to stay away from sweets, though. But my dad would have loved to been your neighbor. One of his favorite sayings was, "I never met a cookie I didn't like." Got to love that saying.

Try my quick, homemade tomato soup: 2 tablespoons olive oil, 1 yellow onion, chopped, 32-ounce carton unsalted chicken broth, 1 teaspoon garlic powder, 2 teaspoons sugar, 1 1/2 teaspoons dried basil. Put oil in soup kettle. Add onion and saute 5 minutes. Add all remaining ingredients. Cover and simmer over low heat for 15 minutes. Garnish with fresh basil or Parmesan cheese if desired. Makes 8 servings.
Hi @parus - Thanks for the pizza crust tip. I'd like to try that. It also reminded me of a recipe I LOVE and haven't made for awhile. I'll share it here...
Low Carb Cauliflower "Breadsticks"
1 bag of riced cauliflower
1/2 cup shredded mozzerella and another 3/4 cup mozerella
1/2 cup shaved parmesan
1 large egg
1/2 Tbls each: minced garlic, chopped basil, chopped parsley
1 tsp salt
1/2 tsp black pepper
Preheat oven to 425. Combine cauliflower, 1/2 cup of mozerella , parmesan, egg, garlic, basil, parsley, salt and pepper. Stir it until it holds together. Place the mixture on a lined baking sheet and spread it out in a 9 X 7 rectangle about 1/4" thick. Bake for 10 - 12 minutes. Remove from oven and top with the remaining 3/4 cup of mozerella. Return to oven and bake a few more minutes until cheese melts and starts to brown. Remove from oven and cool for 10 minutes then cut into "breadstick" size. You can eat this alone or serve it with red sauce. Yum!
Hi @jakeduck1. I'm sorry to hear about your accident. Hope you are feeling better. Has this happened before? Do you drive? You should consider having someone drive you and accompany you shopping until you are able to resolve the problem.

Most good things don’t take 5 minutes unless you go to a Whole Foods type of store and pick up healthy frozen meals for one. May I suggest you take the time to prep some veggies or buy them already cut up. I toss any veggie I have including red potatoes and toss with a good olive oil , salt and pepper and throw them in the oven at 400 degrees. Have also thrown in grapes. Takes a half hour or more depending on how many you have. I like to add chicken sausage with it and add some kale about the last 5 minutes. Veggies are all nice and browned and carmelized. Line the pan , make a lot to reheat in microwave, minimal clean up. You can add some of those veggies to eggs for an omelet. Or spread on a Naan and cover with a little cheese under the broiler.
Stuff an avacado with canned salmon or tuna. Buy pre made soups and pre made salads if you don’t like to cook. Add some noodles and frozen veggies to chicken or beef broth...that’s 5 minutes. Avoid processed meats on white bread if you can.
For those of you who do cook, a great snack is to toss a can of chick peas or garbanzo peas with olive oil and seasoning into the oven until they just start to turn brown, around 400..... So nutty and yummy warm or cold. Popcorn is a good snack...I use the jarred kind and pop it with coconut or avacado oil which don’t burn.
Can’t go wrong with olive oil...and yeah I love to cook but also pick up healthy frozen meals ...always reading the labels....

@parus it is a good feeling to bring a meal to someone who is struggling with health issues, I have done three times in the last few weeks, and our neighbors love it when I bring cookies or any other baked goods over to them. Now I just have to decide if I should do Easter themed cookies or late St. Patrick day cookies.
