Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

Well I’m off to the store to pay for my groceries I got Fri afternoon. I got really dizzy, lost my vision and collapsed in a heap. Oh the joy of shopping. Probably passed out thinking of all things that needed cooked. Hope they still have my junk.

Hey y’all, I made cauliflower pizza crust. Loved it and will do thus again. I purchased a 1 lb bag already riced, cooked it in the bag, mixed in grated Parmesan cheese and an egg. Add
Toppings of your choice after baking the crust and back in the oven.
This crust it easier than regular pizza dough (unless you buy it made). I will do this again!!

@gingerw There are so many holidays to celebrate and they mostly involve indulgence of some kind. I did bake sugar cookies in the shape of shamrocks with a powdered sugar glaze and green sprinkles. The neighbors were thrilled as no one does anything much for St. Patrick’s Day. I arrived with cookies and placed smiles on faces. A nice way to celebrate an honored saint.

Ah, St. Patrick's Day! A great day for all those calorie and sodium laden foods. Corned beef, cabbage, potatoes, carrots, Irish cream. All things not renal diet friendly, so off my menu. Perhaps chicken for dinner. Apple with red pepper hummus for breakfast, yummy!

@lioness 400 degrees for 20 minutes. You bake the crust first then add toppings. And return to oven for 10. I think I used the one on wholesomeyum.com

@jakedduck1 Leonard, I hope you are feeling better now. Did someone have to bring you home? Passing out in a store would be scary I would imagine.

@hopeful33250 Hummus in scrambled eggs sounds interesting. Do you mix it in before cooking or make it like an omelet? I love omelets with pear and goat cheese in them. That's my favorite. Apples and cheddar are good too.

Have you seen the latest about eggs may not be that good for you after all? Apparently now they think they up your chance of heart disease! Oh well, I was getting tired of eggs anyway, something that happens rather regularly, but it doesn't leave much else for breakfast that has a lot of protein in it. I am no longer eating Greek yogurt because lactose is a problem for me now. I think I actually have IBS and dairy is a trigger. It's always something. I do not have a problem with lactose-free yogurt but the only one I can find is at Whole Foods and is not a Greek yogurt so it has less protein, and is not no-fat, just low fat. I will not eat soy based things.

@contentandwell I use peanut butter and jelly on toast for bkft. Maybe eggs ,2 times a week Its always somethong isnt good for you remember the tuna fish hype If you eat in moderation I dont think you get in trouble my opinion

@lioness I think that tuna is still considered to be something that should only be eaten occasionally, along with swordfish and other fish of that type like fresh tuna.
I guess peanut butter on toast would be OK. I rarely eat jams and jelly because of the sugar.

You remind me of my mother-in-law. She always said "all things in moderation". I was so fortunate to have such a wonderful mother-in-law. She was an absolute dear.

@contentandwell I put the hummus in the egg so it's like an omelet. Also, an egg with spinach and feta cheese is good too.
