For the second stuffed tomato recipe, it’s more about the method than it is the ingredients, so I’m just going to post a link to a video from Jacques Pepin demonstrating that. The filling will change depending on what I have on hand.
I do hollow my tomatoes out a bit for this recipe as well, then I incorporate the flesh back into the filling.

Oh yes, most recipes depend on technique as much as on ingredients ! And of course, results depend of a cook 100 % lol ! If there are 20 people making the same recipe there will be 20 different results in taste and presentation.
This sounds and looks great - and I agree, implementing light "scooping out" is good idea, I was thinking about that when he started placing filling on the top.
This could be very nice side dish for baked salmon fillets 🥰 !
Thanks so much for the link 👍 : ))) !!!

1 Reaction@turtbean Gotta love Jacques Pepin; the man is a culinary genius.
All these ridiculous poseurs on these competitive cooking shows are not fit to tie his apron strings.
I met his buddy Pierre Franey once at a local vineyard; he was there for a cooking demonstration and his dish that night was mussels in white wine.
He said, “We start with stick of butter…”
A bunch of people in the audience gasped and he snapped,
“0h, come on now!! This recipe serves 8 as a first course - you are afraid of maybe a tablespoon of butter?!”
I started clapping and soon everyone followed - even the naysayers - and once the wine started flowing nobody cared anyway…🥂🥂🥂

1 ReactionSome people had posted about a couple of books and other diet items and now I am not finding them. Please LOOKING for help???
@miggie - there are some suggestions in the very first few posts, let me know if you don’t see them and I’ll copy them in. There were two books from @surftohealth88 and then a couple of websites from other people.
Another recipe, vegetarian, and full o’ beans and tomatoes.
Tomatoes & White Beans
3 TB olive oil, divided
1 medium yellow onion, finely chopped
3 TB tomato paste
3 cloves garlic, minced
1½ tsp Italian seasoning
½ tsp salt plus, or to taste
¼ tsp crushed red pepper flakes, or to taste
1 28-oz can whole peeled tomatoes, undrained and crushed by hand*
1 15-oz can low-salt white beans, drained and rinsed
5-oz baby spinach
1 oz Parmesan cheese, coarsely grated
Set a large skillet over med-hi heat and add 1 TB of the oil. Once heated, in with the onion and cook 5 minutes or so, until they just begin to soften.
Add in the tomato paste and cook, stirring constantly, until it just begins to darken, maybe 2 minutes. Stir in garlic, Italian seasoning, salt and red pepper flakes and cook, stirring often, just until you begin to smell the garlic, about 30 seconds.
Add in the crushed tomatoes and the beans and bring it to a good simmer over, stirring often, until slightly thickened, about 3-5 minutes. Toss in 5 the spinach and cook, continuing to stir, until bright green and wilted, 2-3 minutes. Off the heat, stir in the remaining 2 tablespoons oil. Taste for seasoning and adjust, if necessary. Serve warm, topped with the grated cheese and slices of toasted whole wheat baguette.
*To crush the tomatoes by hand, pour into a medium mixing bowl and cut into each tomato with a knife or scissors. This will keep them from popping. Next, squeeze the tomatoes into smaller and smaller bits with your very clean hands, until you achieve your preferred consistency.
@turtbean
I finally found them. This time I wrote them down. I thought I would check at the library.
Trying to get him to add protein to his diet. LOL That gets a big good luck. He doesn’t really cook. I ask him if I could fix him something and did not get an answer.

1 Reaction@miggie - I made sloppy joes last week, using ground turkey in place of the usual ground beef, and I used whole wheat buns to keep it a little healthier. I’ve also made sloppy joes using lentils, and I was quite surprised at how good they were. Both are good sources of protein.
I’ll get those recipes posted up for you in the next day or so. I’ve found most people like sloppy joes, because it’s kind of a childhood/nostalgia thing. I like them simply because they’re delicious!
@turtbean
I just fixed sloppy joes you are right so good. You have to laugh when you read this I ask if I could fix him something to eat, didn’t get an answer so I didn’t press. He is his own person. His eating is not the best.

1 Reaction@fmdsouthard This was 30 years ago or so, but it was doing some work for a gentleman and when I drove to his house he had a good sized pen and had goats in it so I asked him about his goats and he told me that he had had cancer and during his chemo he wasn’t doing to good.Someone gave some goats milk and Doc told him I don’t know what you are doing but keep it up. Anyway he said it did him so much good that he bought goats and was giving it to people that were going through chemo . As far as cows go they give GH for milk production. My opinion is raw milk has many health benefits, after chemo I can’t say since it knocks your immune system to the ground.
