For the second stuffed tomato recipe, it’s more about the method than it is the ingredients, so I’m just going to post a link to a video from Jacques Pepin demonstrating that. The filling will change depending on what I have on hand.

I do hollow my tomatoes out a bit for this recipe as well, then I incorporate the flesh back into the filling.

Oh yes, most recipes depend on technique as much as on ingredients ! And of course, results depend of a cook 100 % lol ! If there are 20 people making the same recipe there will be 20 different results in taste and presentation.

This sounds and looks great - and I agree, implementing light "scooping out" is good idea, I was thinking about that when he started placing filling on the top.

This could be very nice side dish for baked salmon fillets 🥰 !

@turtbean Gotta love Jacques Pepin; the man is a culinary genius.
All these ridiculous poseurs on these competitive cooking shows are not fit to tie his apron strings.
I met his buddy Pierre Franey once at a local vineyard; he was there for a cooking demonstration and his dish that night was mussels in white wine.
He said, “We start with stick of butter…”
A bunch of people in the audience gasped and he snapped,
“0h, come on now!! This recipe serves 8 as a first course - you are afraid of maybe a tablespoon of butter?!”
I started clapping and soon everyone followed - even the naysayers - and once the wine started flowing nobody cared anyway…🥂🥂🥂
