Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

I can gag it down but it’s hardly a meal or a favorite.
I wonder if they have berries all ready to just dump in without added sugar or sodium.

You can purchase frozen berries with no extra sugar added in the frozen food section at most all grocery stores including Walmart.

Who’s got a great recipe that takes 5 minutes, doesn’t have a lot of ingredients, little clean up, can’t be fried, I’m getting tired of cereal and sandwiches any ideas???

Jake, a great breakfast idea if you like eggs is to combine eggs, veggies of your liking such as green or red peppers, Idaho potato or sweet potato, onion, mushrooms, add milk, salt and pepper to taste and maybe some shredded cheese. Combine together and pour into a casserole dish and bake at 350 degrees long enough for the eggs to set. Remove, allow to cool, cut into portion sized squares and place in refrigerator to be easily used each morning to dish out, warm in microwave for 40 seconds or so for a quick easy breakfast for the work week. This is something you can do on Sunday for your week ahead.

Hi, @tdd. Welcome to Connect. I just now logged on to Connect, and I opened to this Recipes, Food Tips discussion. I don't usually follow this discussion, so I am happy to read your breakfast egg casserole idea. I am going to try it tomorrow and enjoy it all of next week! I think I would like it for my lunch! Thank you for sharing.
What brings you to Connect? Do you have an interest in cooking for a particular health reason? Do you simply have a love for cooking ?

@tdd @jakedduck1 The frozen blueberry idea is great. I had been buying little packages of blueberries in the produce department but I recently came across very large bags of delicious frozen Maine wild blueberries for about $10 which is a heck of a lot less expensive than fresh, and there is nothing added to them. I use them in my oatmeal and yogurt. Since they are small you really do not need to thaw overnight. I plan to make some blueberry muffins with them too. They do exude juices more than fresh so they turn the yogurt or oatmeal blue but that's OK with me. They still taste good and are as good for you as fresh.

@tdd People think I am a great cook but I always figure if you can read you can cook. I always start out by following a recipe the first time and after that I might vary it, but I would love to know some proportions for your recipe for breakfast eggs. I have made quiches and strata but yours does not have bread or crust so fewer carbs. Thanks.

Hahaha, I sure did get a kick out of that statement.
I suppose what you say is true for most people but as they say “There’s an exception to every rule.” Unfortunately I am the exception to almost every rule.

Ah, but Leonard, down in your heart, you don't want to cook. You're only doing it out of desperation and the easier the better. My son in law absolutely hates food prep, cooking, grilling or anything beyond opening the fridge and reheating in the microwave.
Give him a computer problem or an electrical problem or plumbing problem and he will keep at it until its solved.
And then it has to be perfect.
Educated and smart but no way a cook and doesn't care.
Sound familiar?

I'm surviving the fear pandemic with some homemade meals. I just had lunch. I had a can of cream of mushroom soup (with added fresh sauteed mushrooms) it was yummy. With pandemic cucumber salad!

Ingredients

2 English cucumbers thinly sliced
1 teaspoon salt
1 red onion thinly sliced
1 cup distilled white vinegar
1/2 cup water
1/2 cup granulated sugar
2 tablespoons fresh dill minced

That sounds very much like a cucumber salad I use to make years ago. Before I knew or could get English cucumbers, I remember seeding them first.
It's so good and I love the new name lol. So good the second day too when it has marinated. The amount of sugar depends on what you think is best but it does need some sugar. And the thinner the slices, the better it is. Thanks for the reminder. I am going to steal your "pandemic" name when I cook up some stuff on Sunday.
