Autoimmune connection to Long COVID

i am a long hauler for nearly 5 years and i do have a pre-existing autoimmune disorder (crohns/uc) and i'm 79 yrs. old. most of my symptoms are food related: dizziness/tingling in feet/brain fog along with not-so-debilitating fatigue but i can exercise daily at the gym. i've tried many supplements and antihistamines to control the after-eating symptoms and not sure they're helping so i decided to see my husband's naturpath who's treating hubby for other issues. this naturpath is very familiar with long haul and he said almost immediately in our consult that the virus goes directly to the weakest part of the body and he knew that from my having crohns/uc that i'd be having leaky gut issues. he sent bloodwork to a lab out of state that determines about 85 food sensitivities and i see this dr. for the results this mon. it will involve removing a lot of foods and i'm ready to try anything as i now have a fear of food and everything seems to trigger sensitivities and symptoms. in the meantime, i found a functional dr. on you tube whose name is Dr. Elroy Vojdani and his videos are so informative as far as his having autoimmune issues and how he treats himself and patients who are having gut issues. He seems well informed and i'm just passing this info on in the hopes that some/most of you might find his youtube videos informative and eye-opening.

I have Celiac Disease which is also an autoimmune . Since Covid I have burning feet and legs that we can lump together as neuropathy, also A-fib and brain fog. Yes, debilitating fatigue, but I've worked up to 25 minutes of walking. 21 minutes with energy, the last 4 are like the energizer bunny whose batteries wore completely down.
Pre Covid (before 2-17-24) I walked 45 minutes energetically 6 to 7 days per week, I was slender.

My experience post Covid: I recovered quickly, had a ton of energy for a few days and slowly felt more and more off as I went into A-fib days later. I've gained quite a bit of weight. And I'm certain my long Covid is related to the Mono I had at 25. I am going to be 79 in under 3 weeks.

To elaborate, at 25, I had mono, a highly contagious illness caused by the Epstein-Barr virus that I caught from my friend's teen who didn't wash the glass he gave me water from. It took 11 months to recover. I never gave it another thought till a year ago. Yes, there seems to be a connection between EBV, Celiac and Long Covid. When I went into A-Fib I was ambulanced to the hospital where I stayed 3 days and was diagnosed with Long Covid.

Long Covid can present symptoms similar to those of autoimmune conditions, potentially influenced by EBV.
It is now medically accepted that EBV can alter immune responses, which may contribute to the development of both Celiac disease and Long Covid.
As I write this I notice my legs burning and tingling from the bottom of my feet to a few inches above the knee. I also don't sleep as well.
