Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

Would work! But not the same though (I do that sometimes, adding fresh salad 🤗) But the result is a bit soggy and weird with slightly solidified cheese. I like it too but prefer it on those whateverwaffles 😊 So, your homework is to test both and report 🤓

Overnight oats are not my favorite, but I have a grandson, age 3 1/2, who is a picky eater. For the past 2 years, his favorite meal at ANY time is his "eatmeal." Overnight oats with oat milk, chia seeds, hemp hearts, protein powder (we use Garden of Life Protein'n'Greens) topped with blueberries or raspberries and served cold or room temperature. Reminds me of Meusli.

As for me, low-fat greek yogurt or cottage cheese, topped with berries, is my go-to.

@feliciaus That's a yogurt variation I have not heard of before, but it sure sounds delicious. I doubt it's helpful though if you are trying to lose weight.

@contentandwell Thank you for liking my comment. You are right it is not helpful if you are trying to lose weight. I am just lucky to eat whatever I like and not worry about gaining weight. I lose weight much faster than gaining it.

Unfortunately, @feliciaus I am on an everlasting diet. I exercise and try to eat well but those pounds are not budging these days.

...definitely a no no for diabetics and those watching weight; my daughter started making her own no-churn ice cream - recipes on internet; mixing double whipping cream with condensed milk; then add flavour you wish and freeze. Having been given some over the months, now store bought ice cream seems so different. She started off putting bits of broken honeycomb in, but I did not like as got in my teeth; then she put chocolate sauce in and recently my suggestion a small bit of sweet molasses drizzled over and its really good...too much for one person but can always ask a neighbour in for a bowl. Recipe is on Internet or I can post; a nice little treat once in a while! She refuses to count the calories!

I started making a base for many meals to get vegetables into my diet, it consists of:
-1 chopped white onion
-1 chopped bell pepper (any color you like)
-2 minced garlic
First, I fry a protein of choice in a pan with olive oil until no longer pink. Lean proteins I like to use are organic ground turkey or chicken. Next, I add the onions and pepper for 5-6 minutes over medium heat with the protein. The last minute, I add the garlic.
Then I add to the top, frozen riced cauliflower, green giant veggies, such as 1 cup of green beans and 1/2 cup of frozen corn. Add seasoning of choice. Some of my favorites, chili powder, cumin, paprika, oregano, Himalayan salt and ground pepper. The other night I added 1/4 cup of Italian dressing in it for flavoring and low sodium soy sauce.
You can make this meal and eat it at any time after you reheat. It's pretty light because of the poultry and also all the veggies without the heavy rice that most of us were taught to use.
