Should I see GI doctor if I have two bowel movements in the morning?
Should I see a gastroenterologist if I have two bowel movements in the morning and I'm sensitive to coffee and spinach?

I wouldn’t. Avoid spinach and buy health wise low acid coffee if you need it.
@nazleer, I rather agree with @riflemanz64's suggestion about avoiding the foods you are sensitive to. My husband regularly has 2 bowel movements in the morning. I have the opposite issue and am excited when I have one a day. (too much info, sorry) I'm often envious of his routine.
Are two bowel movements in the morning typical for you? It just might be what's right for you. Have you talked to your primary care physician about it?
My Mayo GI told me that up to three per day is normal.
Sometimes I have three depending on what type of foods I eat. I feel it's borderline diarrhea.
My husband has up to five a day which seems normal for him. I on the other hand have cronic constipation and always have had. Sometimes on a long walk I will go and not know it because I can't feel it until it's too late. Now I have a suppository every day ( nearly) before I go out. I eat all the high fiber foods and go to the gym about 4 times a week and do a 5 mile walk in between the gym days.
Some days I have 6 small or medium per day. I just can’t seem to get them to bulk up into 1 - 3 per day. It’s annoying. Still can’t find the right “formula” for either fiber or supplements to help. But then I battle diverticulosis and my system is just not completely right.
