Hmm interesting, I had Covid October of 2020, about 7-8 months before...could this still have an effect?

Perhaps. Some of the post-Covid studies are showing that some side effects you may have escaped during the virus pop up the next time your system is stressed - as with the vaccine immune response, or another Covid infection or another virus.
