Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

My daughter signed up for and received meat and chicken from ButcherBlock.com. If you sign up in September you get 1 lb free ground beef for LIFE. She said the sirloin steak and chop meant were excellent. All grass fed food...they tell you when it will be delivered. Not sure if she had the chicken yet. Can cancel anytime and get automatic delivery if you want and pause your delivery if you are going away without using the free beef for life. Don’t know how long that promotion lasts but she is a foodie and loved the taste of the steaks and beef so far.
Worth a look to see the different meal plans and cost.

Meals on wheels called today and we don’t qualify for several reasons. You have to be house bound. No one can drive or shop or cook. Cant have a caregiver.
I think that meat your daughter gets is overpriced. My friend came to my rescue. She brought me some lasagna a salad and some garlic bread.

Yay for lasagna! She calculated what she paid vs what she spends on grass fed beef which wound up being cheaper than the store bought beef. I don’t know about the chicken. A pound of grass feed chop meat here is almost &10 a lb and I look for 80/20 ratio,,,20%,fat otherwise it’s too dry. She buys organic (not all veggies have to be) and grass fed meat but not everyone can afford to. I’m going down to a farm stand tomorrow that has beef fillet mignons ...4 for $20.....have had them before ...nice size and super thick...$5 for 4 meals....not grass fed.

Well, I’m glad you are not housebound or unable to drive or require a caretaker. So I guess that means I’m glad you don’t qualify for Meals on Wheels.

@debbraw The pizza looks delicious, and I’m very impressed that he knows how to throw it up in the air! I too made a pizza this weekend, the first time in years. Unfortunately the crust didn’t get cooked enough so we put the pieces back in the oven directly on the rack. It was OK but not up to the standards I set years ago when I used to make great deep dish pizzas. We called them “Super Bowl” pizzas because I always made them for game time dinner.

@contentandwell - My son was showing off in that picture, but I must say that he practically worked his way through college working in a pizza restaurant so it appears that he learned a few things along the way. Ours was delicious. Sorry yours did not meet expectations! Sometimes when we haven't had something for years, the real thing can't match the memory. ... just saying. LOL

@debbraw The problem with mine was that crust didn't cook well enough so it was soggy. I used to be such a good cook but now my cooking skills are going downhill.

@contentandwell - None of us are playing our A-game when we have physical issues. You have been through so much in the last few months. Give yourself a break. I bet your cooking skills will come back strong when YOU are feeling strong!

Cooking question
I found an easy, for a normal person but a challenge for me, breaded pork chop recipe but I don’t have a few things. I don’t want to go to the store so can I substitute the following or should I continue to eat cereal?

1 teaspoon Cajun seasoning
1 1/2 cups cheese and garlic flavored croutons
Pam Butter Flavor No-Stick Cooking Spray 5 Fl Oz

Here .s a Tuna salad recipe I tried liked it . Cook pasta ,couscous ,or rice cool. In dish mix your tuna fish, olives, celery and red wine vinegrete dressing . I didn't have olives so substituted yellow pepper rings Sprinkle with grated parmesan cheese

Guess I won’t make this but it sounds good. I only have 1 ingredient.

Oops... I don’t have any flour, any substitute for that for my chops.

@jakedduck1 I think you can substitute any seasoning that you like for Cajun seasoning.
If you are supposed to crush the croutons (?) you can use bread crumbs, panko, or crushed crackers like ritz.
If the Pam is to coat the pan just put a thin coating of EVOO or any oil on the pan. I always do this. I use a paper towel to spread the oil so it is a very thin coating.
Skip the flour.

@jakedduck1 I keep wondering what your mom eats! Not cereal, I hope. For your recipe, you can crunch up the croutons to make fine bread crumbs, still in the Cajun seasoning and you’re almost ready to go! Dip each chop in the crumbs and brown on each side, then put in a 350. oven til done! Easy
