Recipes, Food Tips, Healthy Eating & More

Posted by Debbra Williams, Alumna Mentor @debbraw, Feb 22, 2019

Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

TOASTER STEAK UPDATE

Well, it didn’t work out quite as well as I thought it would. Good that I conducted my phase 1 testing outdoors. The whole mess caught on fire 🔥 and blew a circuit. The neighbors dog ended up with my dinner and has become my best friend. He’s disappointed in his treats now. He expects Filet Mignon now. Wasn’t to bright getting such a pricy cut for the test, I was a bit overconfident I guess. Oh well, on to phase 2 testing and a cheaper steak. I hope the dog won’t be to unhappy with the cheaper cut if phase 2 trials fail.

@jakedduck1 , are you saying you attempted to cook a steak in a toaster? what an idea! you are too funny

I'm online this afternoon trying to figure out how to cook raw shrimp. I ordered raw shrimp (instead of cooked) by mistake and raw shrimp were delivered. I've never cooked raw shrimp but I'll have to figure this out! The instructions I found say to thaw the frozen raw shrimp in the refrigerator, not on the counter, so no shrimp for me tonight. Maybe tomorrow... I hadn't thought of putting them in the toaster 🙂

Hi,

Malt vinegar and fish and fried cod is very much an English tradition. When I visited England to see family (lived there for 6 months as a child) we always got the fish and chips in paper wrapping with the vinegar all over.. My mom was from Kilkenny and my dad from Manchester so I grew up with malt vinegar as a staple . Grew up eating Welsh rarebit, corned beef and cabbage, Bubble and Squeak, liver and onions with bacon (use to eat that for breakfast) and of course, fish and chips. I’m the only one in my family who loves liver. Had to make sure everyone was out of the house before I cooked it because of the smell. We always had calfs liver...not beef liver like in the markets today. Lots of butter and eggs and still everyone lived into old age.

Shrimp, yuck!! I’d throw it out if I were you. I know I’m the odd ball but I don’t care for fish or seafood.

@merpreb

@imallears - what do you make with them off season? Are they frozen sans pits?

@merpreb
Hi,

Yes...no pits....I put them in Greek plain yogurt when I have yogurt for breakfast (not yogurt so much anymore). I do put them
on a gluten free waffle a lot. I like to defrost them in microwave before toaster pops up and squish them down over a warm waffle. I do this with frozen blueberries also (freeze fresh blueberries and keep in freezer).
Could have on vanilla ice cream. I also just like to eat a few by themselves that I defrost in microwave so they’re slightly warm.
Good grief I loves those cherries.

Hi,

You can thaw frozen shrimp in cold water...keep changing out the water so it doesn’t get warm. Just thaw the amount you need..very fast. Don’t overcook the shrimp whichever way you decide to cook it. It cooks very fast. You will taste the difference between cooked and fresh frozen shrimp and never buy cooked shrimp again.

@jakeduck

Hi,
Liver is not for everyone. Bubble and squeak is something you would like. It’s the leftover corned beef, cabbage and potatoes fried up in lots of butter. Welsh rarebit is just melted cheese and onions over toast. Also not everyone likes seafood as you so stated. You are a chore indeed 😏

Did you know there are YouTube instructions on how to cook steak in a toaster? Can’t believe you murdered a fillet mignon (of all cuts) in a toaster ....the horrors! I do think filet mignon is over priced and over rated though, and I prefer the rib eye as it has more flavor and is tender because of the marbling. Perhaps Fido would like rib eye. It makes a great meatball when ground up with other cuts.

Bon appetite and all that

Hi,

I am from NY originally and we use to travel up and down the coast to visit family in Canada. Fantastic states, seafood!
I skied many many years in college and after in Vermont also on Mt Killington. My favorite slope was Mt Prospect...smaller slopes back then and not too many people knew about it. I never got off the Intermediate slopes but I can remember hearing the sssh sssh of the skis over the snow and sometimes I was the only person on that particular slope. A stress free healthy way to spend the day and then amble up to the bar at night for the hot toddies and then off to an uninterrupted night of zzzzzzzzs.

I’d break a bone if I tried that today although I always did want to try bungee jumping. I got over that when my son who was in his 20s back then wanted to try bungee jumping and a chiropractor friend of ours said why don’t you just drive your truck into a stone wall....are you nuts? End of bungee jumping.
