Recipes, Food Tips, Healthy Eating & More

Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

@debbraw This sounds delicious, but if I add one more thing to my kitchen, I think it will explode! Not just the kitchen, my husband too.

Hi @karen00 - I was a little afraid too since I'd never used a pressure cooker. I practiced a few times with a cup of water just "cooking" for 2 minutes then doing a quick release of the pressure. After my practice I've been fine. Last night I did sweet and sour pork. It was delicious. I used pork tenderloin cut up into 2" strips. I sauteed them just to get a quick brown on the meat. Them I put the meat in the instapot along with a diced onion, a diced green pepper and this mixture: 1/4 cup pineapple juice, 1/4 cup cider vinegar, 3 Tbls low sodium soy sauce, 1 Tbls Worcestersire sauce, 1/2 tsp salt, 2 Tbls brown sugar. I cooked it on high pressure for 10 minutes. Then added pineapple chunks, thickened up the sauce with some cornstarch and water, and served with basmati rice. It was yummy. And I have enough left over for another meal!

What a great sounding recipe, @debbraw. I'm sure it was good. I've always used a traditional pressure cooker. I watched my mom use it as I was growing up and so I never feared the process. I'm going to have to try the sweet & sour pork in my pressure cooker. I might look at the instapots, they would be easier to store than a regular size pressure cooker. Like you, I always brown my meat before putting in a pressure cooker or a slow cooker, it's much tastier and cooks better as well.

@debbraw Hi Debbra, that sounds absolutely delicious! I am saving the email for future reference! Please keep the recipes coming when you use it. The practice steps were good ones and ones I will use. When you added the pineapple, did you add the juice too?

I know what you are saying, @contentandwell. I actually have kitchen appliances stored in my bedroom closet because there is no more room in the kitchen. I feel like a kitchen appliance junkie😉

@karen00 - on the sweet and sour pork you use the juice with the cider vinegar and other parts of the sauce. At the end, you just add the pineapple chunks.

@hopeful33250 - The recipe called for 1 and 1/2 lbs of pork tenderloin. I bought the smallest package I could but it was still a little over one and three quarters. By the time I trimmed it down I thought I was close enough so I just went with what I had!

@debbraw : other than the old stand-by of chicken soup - good for any ailment, in my opinion - perhaps something like a rice pudding? My mother used to cook this for us kids when something was off with our stomachs. Recipes online, and you can make it as rich - or not so rich - as you like, adjust the sweetness to your taste, toss in nuts or dried cranberries or whatever strikes your fancy.
Oops... I clicked on this discussion, and just replied to the initial post by Debbra regarding queasy stomach. Since this has resolved itself, judging by the sweet and sour pork recipe posted recently, just ignore this contribution!!!!!

Hi @debbraw and @lioness

Well, I went to the meat market, got the pork and had them cut it into strips so this weekend I'm going to try the sweet and sour pork. I hope it turns out as delicious as it sounds!
