Recipes, Food Tips, Healthy Eating & More

Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

@hopeful33250 Hi, You could use a mandoline for the thinnest most uniform slices. The food processor would have to have the attachment that you would feed the sprouts through....use to have one many years ago. Was more trouble than it was worth as I remember. I generally use a knife unless I am doing a large amount of slicing of veggies for a special dish or company. I also wear a glove that I use for grating when I use the knife cuz I am a klutz when it comes to nicking my fingers. Don't need blood in my veggies.

@imallears A good idea~ I'm a bit of a klutz when it comes to slicing veggies as well. I'll use the gloves as you suggested.

@lioness and @imallears, I can't believe I never thought of that before! What type of gloves do you use? I'm thinking that the vinyl dishwashing gloves could get nicked as well.

Good morning,

The glove I use is made for grating so you don’t grate your fingers. I only use one . When I’m grating it’s on the hand that actually grates. When I’m slicing , it’s on the hand holding the veggie. I use it if I’m slicing very thin pieces. You can find it in any store where the kitchen gadgets are...usually near graters. They’re washable and durable.

@imallears Those gloves can certainly save your hands. I should get some for grating zucchini. Safety while doing food prep can get overlooked as we power through a recipe.

Hi,

Remember to buy only one...that’s all you’ll need.

Update on instapot cooking: I like roasted brussel sprouts better than ones done in the instapot. The positive part was that I put 2 lbs of shaved brussel sprouts in the cooker along with diced apples, dried cranberries, cooked bacon, cider vinegar, maple syrup and olive oil. It took 3 minutes to cook this whole thing perfectly. The downside was that I don't really like that vinegary taste and I hate the cabbage-y smell. It was made worse by the fact that when you vent the steam to let the pressure out, it goes all over the room making a terrible cabbage smell throughout the house. Yuck. I made hotdogs and hamburgers today and postponed my sweet and sour pork til tomorrow. I'll let you know how that comes out. (I don't mind my kitchen smelling like sweet and sour pork!)

@debbraw Hi Debbra, thanks for the posting. I have an instapot but haven’t used it yet. Keep the recipes coming! I don’t know what to do with mine! I’m half scared of it. .......Karen

Hi @karen00 - I was a little afraid too since I'd never used a pressure cooker. I practiced a few times with a cup of water just "cooking" for 2 minutes then doing a quick release of the pressure. After my practice I've been fine. Last night I did sweet and sour pork. It was delicious. I used pork tenderloin cut up into 2" strips. I sauteed them just to get a quick brown on the meat. Them I put the meat in the instapot along with a diced onion, a diced green pepper and this mixture: 1/4 cup pineapple juice, 1/4 cup cider vinegar, 3 Tbls low sodium soy sauce, 1 Tbls Worcestersire sauce, 1/2 tsp salt, 2 Tbls brown sugar. I cooked it on high pressure for 10 minutes. Then added pineapple chunks, thickened up the sauce with some cornstarch and water, and served with basmati rice. It was yummy. And I have enough left over for another meal!

@debbraw This sounds delicious, but if I add one more thing to my kitchen, I think it will explode! Not just the kitchen, my husband too.
