Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

@merpreb -- my daughter makes a salad that I really like that is great for lunches. It's probably pretty flexible for adding different veggies you like.

Alyssa’s Quinoa Salad
------------------
2 cups red, white or black quinoa (cooked according to package directions)
1 cup mango chunks (frozen and thawed is okay)
1 ½ cups black beans (drained and rinsed)
1 cup edamame, use frozen and cook according to package directions
1 whole red, yellow and orange pepper, diced
1 cup broccoli florets (steamed or raw)
½ cup cilantro, finely chopped
2 tablespoons rice wine vinegar
½ tablespoon olive oil
1 tablespoon Newman’s Own Lite Raspberry Walnut Vinaigrette
½ teaspoon salt
Ground black pepper to taste

Toss all ingredients in a large bowl and serve at room temperature or chilled.
Feel free to add more vegetables, such as yellow or orange peppers, or increase the amount of beans for added fiber and nutrients. This recipe is great served with grilled chicken or served alone, and works as a meal or side dish.

I need help! I’ve been home from the hospital since Friday and lack motivation to do anything! I’m not eating because I don’t want to get out of bed. I’m just exhausted and in pain - I’m sure it’s stress; therefore it’s fibro and RA acting up. There is absolutely no one to help me but me. I’m tired of people telling me how strong I am and that I can do this! I know it, I just don’t want to do it. Please, can anybody help me?............Karen

Divinity is a candy. My grandfathers was scrumptious.

Hi Jake!
I make my stuff peppers in a slow cooker or on the stove. I mix the raw hamburger with onion and rice and stuff the pepper. I then take tomato sauce (sometimes I use tomato soup) and thin it out (maybe a 4th cup to 1/2 cup h20). Spread over the stuff tomato’s and slow cook for 6 hours or stovetop method until peppers are soft and meat is cooked. I prefer red, yellow and orange peppers because they are sweeter. Hope this helps!

Have you read the instructions that came with the air fryer? It should have some info about cooking things together. I would guess that they could be cooked together but I'm not sure.

Sometimes I feel like staying in bed all day! You have to force yourself out of bed even if it’s just 15 minutes a couple times a day. When you get up make some snacks that you can keep next to you. It’s hard and I can feel for you. I have onset Parkinsons and it can take a toll some days. Keep the faith!!

Was just gonna have a steak for dinner with a baked potato or diced seasoned red potatoes and some asparagus using the air fryer but not sure when to put the potatoes and asparagus on the rack/dish or do they all need to be cooked separate?

Is your potatoes fresh? If so it takes longer then fresh or frozen veggies. If you have the kind that is frozen....I put together. Hope that helps.

I am sorry to hear that you are lacking in motivation right now. It certainly is understandable, though, given what you have experienced.

When you say there is no one to help you do you mean that there is no one to cook or buy groceries for you?

If that is the case it is probably time to call in the reserves. Call friends, family, your church, even neighbors who live nearby and tell them what you need and ask them to pick it up for you.

Most grocery stores in my area are also doing grocery shopping and pick-ups at their stores and also deliveries. For deliveries, there can be an added cost, but it might be worth it until you get back on your feet and feel a bit more motivated.

Will you post again and update me on your progress of taking care of yourself at this difficult time?

Is your potatoes fresh? If so it takes longer then fresh or frozen veggies. If you have the kind that is frozen....I put together. Hope that helps.

Good idea, @margieinia. When I'm roasting a lot of veggies together, I will put some of the veggies (with the longer cooking time) in the microwave for a few minutes to begin the cooking process. That way they get done at the same time as the softer veggies.

@jakedduck1 you might try that with the potatoes.
