Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

Hi,
Kudos to you for following a healthy diet and reading all those ingredients. I would dearly miss my nightly wine, especially sipping as I cook. Have you tried any of the non alcoholic wines? They seem to be a lot more expensive than regular wine and some add fruit juice. I like a full bodied Cab and my one foray into a non alcoholic wine was a few years back. I remember it tasting like diluted regular wine and a tad sweet. I’m thinking a white might taste better. There’s a lot of brands on the market. Maybe you can find one you like and then keep it under lock and key, lol, just for you. You can get use to anything, I guess.

@imallears I must admit, I think part of what I enjoy with a glass of wine is the more relaxed feeling I get.

I stopped drinking any alcohol of course when I was pregnant, and I didn’t resume until my son and daughter were off to college. I used to say with the two of them, i didn’t drink because I couldn’t afford to be mellow!

Hello all
Anyone know how long to cook a small boneless skinless chicken breast in the microwave?
I cooked it to long today and it was like eating shoe leather but I got it down. My Nuwave arrives tomorrow but I think I’ll return it and get a different one. I’ll let you know how it works but keep in mind I’m no Galloping Gourmet.

@jakedduck1 Glad you got jt down I never cook in microwave so dont know Your Nuwave should be a good way to cook ,a friend only cooks this way now

Your very wise Linda. Microwaved food isn’t as good. I’m looking forward to my air fryer. It’s supposed to reduce cooking time by 40/50% and use less energy. Anything to get out of the kitchen quicker.

No worries, we all understand that you are not a Galloping Gourmet. I'm looking forward to hearing about your experiences with the Nuwave. By the way, meat or poultry do not cook well in a microwave. Microwaves are best for heating foods but not for cooking.

@jakedduck1 I have never used the microwave to cook a chicken breast. I often either poach one to cut up and put on a lunch salad, or sauté in a little EVOO.
If you plan ahead buy regular chicken breasts and simmer them, covered, for about 25 minutes (time varies depending on size) then leave them in the water, still covered, for about a half hour. The chicken comes out the best that way, and then you can boil down the water to make a very flavorful broth. If you are going to use the broth you can add extra flavor by adding some onion and seasonings, and lemon juice or grated lemon rind. I really like tarragon with chicken.

Hi,

As others have said the microwave is a big no for cooking. FYI for the most tender and flavorful and juicy boneless chicken breast this is the way I do it. This is for one breast.
Preheat oven to 450 ....yep 450
Rub chicken with olive oil
Mix your seasonings...salt, pepper, whatever else you like with a little bread crumbs on a sheet of wax paper and roll that chicken in the mix and press those seasonings into every nook and cranny. The more seasoning the better.
Put on on alum foil or parchment paper in preheated oven...10 minutes each side, flip, 10 minutes the other side.
Let it sit and rest for a couple minutes ....Perfectly cooked , juicy...you will be surprised. Slice vertically and put any leftovers over salad if you like.

Chicken is often over cooked . Cooking longer at a lower temp makes for dry chicken. I cook bone in chicken breast this way too. High heat...short time, like you would grill a juicy burger on a hot,grill. Maybe you can do your chicken in your new appliance this way .

Ps,looks,like you are taking more of an interest in cooking....good for you....the science behind it is interesting.

@contentandwell has some good ideas, @jakedduck1. I've also used "cooking bags" for the oven. Add seasoning, other veggies that you have on hand. They will come out very moist and flavorful. There are cooking directions on the box that will give you cooking temps and times.
