Recipes, Food Tips, Healthy Eating & More

Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

@contentandwell I put the hummus in the egg so it's like an omelet. Also, an egg with spinach and feta cheese is good too.

@hopeful33250 I've done feta and spinach too, and I like mushrooms and swiss.

@lioness It is paste like substance made from mashed chickpeas or another bean, mixed with tahini, garlic, and other spices. It is good with apples, or chips. Source of high protein. Good for you!

@lioness Yes, but it is a bit "grainy". It starts out like oatmeal, in that you can add all types of things to it and make it very flavorful. Basic hummus is pretty mild. My favorite brand is Athenos.

I make tuna and chicken salad with mashed avocado. I add some garlic and onion powder. I eat it as a source of protein. I occasionally eat it on sprout bread.

@hopeful33250 Hummus in scrambled eggs sounds interesting. Do you mix it in before cooking or make it like an omelet? I love omelets with pear and goat cheese in them. That's my favorite. Apples and cheddar are good too.

Have you seen the latest about eggs may not be that good for you after all? Apparently now they think they up your chance of heart disease! Oh well, I was getting tired of eggs anyway, something that happens rather regularly, but it doesn't leave much else for breakfast that has a lot of protein in it. I am no longer eating Greek yogurt because lactose is a problem for me now. I think I actually have IBS and dairy is a trigger. It's always something. I do not have a problem with lactose-free yogurt but the only one I can find is at Whole Foods and is not a Greek yogurt so it has less protein, and is not no-fat, just low fat. I will not eat soy based things.

@contentandwell I am not lactose intolerant but do not eat it often. Seems to give me a stuffy head. I do not use soy products either.
