Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

The roast idea worked out well. We had roast beef sandwiches and salads with very thin slices of roast beef. Yesterday I went to the grocery store and like stocked up on Mrs. Dash flavors. My favorites are garlic and herb and fiesta lime. Both tasted good on beef, chicken, pork, and fish. I also use lemon pepper and buy a brand that doesn't contain salt.

I am doing roast beef in the slow cooker too! They were on sale. Oh yummy, yummy.

@harriethodgson1 I make my own no salt seasoning so I can have it my way. Also less expensive.

Here's the taco seasoning recipe: 6 teaspoons chili powder, 3 teaspoons onion powder, 4 1/2 teaspoons cumin, 1 1/2 teaspoons garlic powder, 5 teaspoons Hungarian paprika, 1/2 teaspoon cayenne pepper (less if desired), 1/2 teaspoon Mexican oregano, 1/2 teaspoon sugar. Store in air-tight container.

@harriethodgson1 I have key lime pepper that I use frequently on fish. It's great on swordfish and other fish of that type (steaks) too.
@lioness you are making me hungry. Tonight will be wild salmon though. I try to do fish two times a week.

@merpreb Some people think that after you have had a transplant, you acquire some of the donor's good and bad traits. I have a greater taste now for spicy foods than I ever had before! I doubt that is it, maybe it's just that as I age my taste buds are not as strong. I also now apparently have IBS. I can't help but wonder if my donor may have had that too.

Hi @merpreb - I think we have the same taste in food. Would you believe that I just stopped at Publix and bought Chicken Tortilla Soup so I'd have some on hand. Will try your slow cooker version soon.

@harriethodgson1 -Thanks for the taco seasoning recipe. I may try it with a the smoked hot Spanish paprika instead of the Hungarian Sweet. I like a little kick to the spiciness. Sounds great.

That taco seasoning sounds SO good but my stomach has become so sensitive to spicy things since I've developed gastroparesis. I'd love a really good taco with fresh salsa. Right now, I'd love just about anything that wasn't bland...does anyone have a recipe for great tasting bland food???

Ok, Merry, and others who want a little "kick" in their soup. (This is only for the adventurous palate.)

Here is a peanut soup recipe for those of you who would like to try something different. I use much less of the curry and cayenne (just a dash) than the recipe calls for (like others have mentioned spicy doesn't work well for me). But this is an outstanding creamy soup. The ingredients that give it nutrition are the yams and/or sweet potatoes, the peanut butter and the coconut milk (which really gives it a creamy texture). Makes my mouth water to think about it.

Senegalese Peanut Soup: Microwave 1.5 lbs of sweet potatoes (I poke holes in the sweet potatoes so they don't explode in the microwave) the skins will slip off after cooking.
In a pot, heat 2 Tbsp of peanut or sesame oil; stir in 1 tbsp of curry, stir approximately 2 minutes; then add 1 1/2 cups of chopped onion, 1/2 Tbsp garlic, simmer 3 minutes. Add ¾ tsp (or less) of cayenne and 1 cup of peanut butter stir.

Add 28 can diced tomatoes, skinned yams, 1 quart of chicken broth, and 5 oz of unsweetened coconut milk...simmer 15 min...

Puree in batches (I use a hand-held blender - one of my favorite kitchen toys - and just put the blender in the pot)

Taste, add salt/pepper if desired...serve in bowls topped with chopped peanuts, green scallions, and cilantro
