Recipes, Food Tips, Healthy Eating & More

Posted by Debbra Williams, Alumna Mentor @debbraw, Feb 22, 2019

Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

Wow! That is all I can say! You are an amazing woman!! I am so sorry for all your loses. I can only imagine how difficult it must be to raise 2 small children while caring for your hubby.
I am happy you have found an outlet to release your thoughts and feelings.
All the Best!

@parus They are saying more and more that an egg a day is healthy! Apparently cholesterol problems are not from the foods that we eat. I can't figure that one out. Also, you can use just egg whites. I just googled turkey burger and there was a recipe using egg whites. It sounded pretty good, I may try it.

@contentandwell Genetics can play a role it is said. For me it is mostly carrying an extra 15 lbs and not enough exercise. My diet is healthy. Also when my thyroid Med starts doing differently. I know I take it faithfully and play by the rules. Have not a clue. I ceased eating eggs for 6 months. My cholesterol went up 30 points. This cholesterol thing has me bamboozled. All the positive, negative, cosmic what and hunh about fat has become just that for me. I still eat eggs. I am not convinced they are the enemy.

@contentandwell It's been a big debate about eggs but back in the 90,s they said eggs aren't the culprit As you know a lot of it is genetic and our liver makes cholesterol so I eat eggs 3x a week ever since my by pass cholesterol has been high noon of the stating have brought it under control so who knows what causes it

@merpreb - Merry - I cannot wait to try the Veggie Soup with Chickpeas. I've been craving soup and this sounds delicious. Thanks for posting. And @harriethodgson1 - your recipes sound terrific too. I think I'm about to upgrade my menus. Many thanks!

What I like I can’t have. I’ve been eating salad the last couple days but thankfully it’s gone. I like meat and potatoes like beef, pork, poultry, lamb chops, lasagna (not much cheese allowed and nothing canned packaged or frozen) and beans, lentils, stuffed bell peppers. It’s stressful just thinking about cooking, I can’t even think of all the things I like. I’m supposed to eat lots of yucky fresh veggies. If I get the courage I’d like to stuff a green red yellow orange white & blue bell pepper but that would be quite an intense project. Ya know, life’s funny, back in the day when I had a feeding tube which I hated from what I’m told, I liked to cook, now I might really like it. I’ll probably have a tuna sandwich for dinner, oh wow I’m so excited!!! Some Fritos would be good but not allowed. Basically I’m suppose to eat what I consider garbage. Anything I’m allowed usually has to be cooked so you know where that leaves me. Been having cereal dry since I ran out of milk. Oh the agony of it all.

I've never posted here before and am not sure what issues everyone is dealing with. I was recently diagnosed with Gastroparesis so I'm learning a whole new way to eat. I'm not a big meat eater, and what meat I do eat has to be very tender and easy to chew. My husband and I have been able to get small top round roasts, about 2 pounds since it's just the 2 of us now. We brown them and put them in the crock pot til cooked and tender, then add carrots, potatoes and sweet potatoes. The sweet potatoes give it a really nice touch that you don't normally get in a stew-type dish. You can also add celery, onions or any other food and spices you'd like in a stew and that fit in with your particular diet. The meat falls apart by the time it's done so I have no problems making sure it's thoroughly chewed. The whole meal is not much work and we freeze half for another time. I like adding rice the second night.
I look forward to the top round roasts going on sale...it's the first food I've looked forward to in quite a while. (Although I also drive around to find Yoplait Greek Whipped Yogurt and eat it with strawberries and/or blueberries. Not sure about the carbs, but it's non fat and has 90 calories).
Thanks for listening, Tracy
