Recipes, Food Tips, Healthy Eating & More
Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.
Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.
Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!
I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

@contentandwell Speaking of cheese. A friend of mine we where talking one day about TINNITIS he said he cured his. He got of off dairy altogether and uses Almond Cheese . Almond milk. I don't think he eats butter but I use Irish Gold. This weekend I started the almond cheese . Its in the refrigerator now and later today I will check it . I,ve had tinnitus seems like forever, so hope this works
@contentandwell- I know that they can be dry. You'll have to google the timing. Every oven is different. You can mix in spices of your choosing or sprinkle them on- just like beef burgers. They are so simple!
@grandmar Very good point . When my son was born we learned shortly afterwards he was allergic to processed foods and dye,s . So that's when we decided to put a big garden and I taught myself to can . It was nice to go to the fruitcellar and get a jar of green beans or whatever.
@lioness Thanks but for now I will stick with dairy cheeses. I do have lactose problems but aged cheeses have no lactose. I have read that lactose is in the whey and in the process of aging the whey disappears. If you are purchasing a cheese that has the nutritional information on it, look for zero sugars. Lactose is a sugar.
When I do have a cheese that is not aged I take Lactaid and that helps.

My welcome to you @ktcrosswalk1- Thank you so much for your salad ingredients. We make our own salad dressing too. I have an aversion to the texture of tofu- any helpful hints on how to over come this?
@contentandwell If eggs are allowed in the diet this helps with the dryness. Rather defeats the purpose of a turkey burger. 🙃
@parus They are saying more and more that an egg a day is healthy! Apparently cholesterol problems are not from the foods that we eat. I can't figure that one out. Also, you can use just egg whites. I just googled turkey burger and there was a recipe using egg whites. It sounded pretty good, I may try it.

Here's another recipe you may wish to try--Eggs in Creole Sauce
2 tablespoons light olive oil
1 tablespoon butter
1 yellow onion, chopped
1 green pepper, chopped
1 teaspoon garlic powder
1/2 teaspoon smoked paprika
1/2 teaspoon dried rosemary
14.5-ounce can petite tomatoes in juice (I use salt-free.)
Dash of hot sauce
8 hard-cooked eggs, halved
1. Put olive olive oil and butter in skillet.
2. As soon as butter has melted, add onion, green pepper, smoked paprika, and rosemary.
3. Cook 5 minutes.
4. Combine canned tomatoes with vegetables.
5. Set eggs in sauce. Add a little water if necessary. Cover and simmer 5 minutes, or until eggs are hot.
6. Serve eggs and sauce over rice.
7. Pass hot sauce if desired. Makes 4 servings.
@lioness My husband goes to lunch every other week with a friend, to a restaurant that is renowned for their chicken tenders -- they claim to have invented them. He gets the chicken tenders for lunch and brings the remainders home. He has two more lunches from what is left! How crazy is that? Their chicken tenders really are the best we have ever had, and just about everyone agrees with that. When my kids come home we almost always have to get some chicken tenders. I no longer eat them, I try to avoid fried foods.
