Summer anti-inflammatory menu ideas

Thought we could share some healthy menu ideas just because it's summer, fresh fruits and vegetables are aplenty, and who doesn't enjoy sitting down to a healthy, tasty meal that could help reduce inflammation.
I have started making Waldorf salad. My mother made it a lot, especially in the summer. And it's not expensive. Start with chopping an apple, sprinkle with lemon juice, add chopped celery, chopped walnuts. I use light mayo just enough to lightly coat the mixture. Could use plain yogurt, I like the light or fat free mayo. One of my favorite easy recipes, no measuring

Simple things can sometimes be a distraction from not feeling well and help promote a positive attitude. I take cuttings from my herbs and put them in these little vases that were my grandmother's. Most of the time they take root and I start new plants. I love those vases and get much joy looking at them. I constantly take clippings from flowers, plants, bushes to fill them.
I use fresh herbs a lot when cooking and it's fairly easy to grow new plants.

Thankyou for all these ideas. Our Southern Hemisphere summer is just starting and it looks like a a bad one as today is first day of Spring [01/09] and we are having hot weather already. So we will be eating lots of salad, fish and chicken. I have GCA as well as type 2 Diabetes so I am concentrating on low carb , high protein diet. It all gets quite complicated because my kidney function is not too good.

Today I am making a pizza for dinner and a salad. For the posters who say your plate should look like a rainbow, these homegrown sweet banana peppers fit the bill. I saute my peppers with a large shallot till softened. Then saute portabella mushrooms in the same pan. I spread pizza sauce (not too much) on the crust, sprinkle some part skim mozzarella cheese on the sauce, spread the vegetables and cover with more mozzarella cheese. I think the cheese above and below the vegetables adds stability so you can take a bite without making a mess. I've been using Boboli crust. I only have one slice but it's loaded with veggies. With a salad I think a healthy meal.
