Summer anti-inflammatory menu ideas

Thought we could share some healthy menu ideas just because it's summer, fresh fruits and vegetables are aplenty, and who doesn't enjoy sitting down to a healthy, tasty meal that could help reduce inflammation.
I have started making Waldorf salad. My mother made it a lot, especially in the summer. And it's not expensive. Start with chopping an apple, sprinkle with lemon juice, add chopped celery, chopped walnuts. I use light mayo just enough to lightly coat the mixture. Could use plain yogurt, I like the light or fat free mayo. One of my favorite easy recipes, no measuring

Fresh green beans
I've been using an air fryer. Only been snapping the ends off, coating with a little olive oil (don't need much) and grated parmesan cheese. Spread in the basket, 400 degrees for 7-8 minutes stirring halfway through. Quick and easy, very tasty

I’m still on my salad binge. I discovered Living Bibb Lettuce and am really enjoying it with my assortment of fruits and veggies. I make something similar to this one almost every day last week. So delicious.

Don’t you just love it! I’m recovering from a smell/taste disorder and there’s something about this salad that just sings to my taste buds! I’m so grateful for my progress!

We do not grill outside. We had a George Foreman tabletop grill years ago. I bought a replacement last year. I have been grilling chicken tenders. I gently pound them to uniform thickness, coat with a little oil, sprinkle with a dried herb mixture, grill 3 to 3 and a half minutes. My guys make chicken sandwiches with low salt, low fat cheese and light mayo or light ranch dressing. I usually pass on the bread and have the grilled chicken on a tossed salad. Pretty simple, not much prep.

So last night for dinner we had chicken soft tacos. Cooked chicken tenders in the George Foreman grill, same directions as the first recipe in the above post. My grocery store sells bottled herb mixtures in the produce section made by a company named 'Lighthouse'. The 'salad dressing' one is a mixture of several herbs and smells as good as it tastes. I cut the grilled chicken into bite size pieces. We used soft carb balance tortillas and filled them with the herbed chicken, shredded lettuce, sliced cherry tomatoes from our garden, fat free shredded cheddar cheese, and a squirt of light ranch dressing. Had fresh green beans grilled in the air fryer (recipe in another post) on the side.
I had one taco but my husband ate three. You can go light on any of the ingredients. I know some people stay away from the dressings, I don't use much.
Had mixed melon fruit for dessert.
This was an especially good dinner.

I’m going to try these fresh green beans today. And, I just bought some yellow squash. Planning on fresh squash, fresh green beans and grilled salmon fillet for dinner.

Tonight I made zucchini fries in the air fryer cutting the zucchini into French fry shapes and using the basic recipe as green beans. Coated the zucchini with a little olive oil, just a bit of salt, grated parmesean cheese and bread crumbs. After 8 minutes at 400 degrees I thought they could use a few more minutes. They were very very good. Will make them again.

For you non-chefs (or assisted-living eaters) Try oatmeal with a mixture of these anti-oxidant foods
Cut up weekly.):
Baby broccoli, grape tomatoes,
Heart of palm, almonds, cashews,
Walnuts, sardines, canned salmon,
Canned mackerel, sliced Munster or Gouda (for protein), etc.

End of summer is here. Lots of melons in the store at good prices. Brussel sprouts are looking good too. We are still harvesting cherry tomatoes, sweet banana peppers, cucumbers and herbs from our garden. Nothing in the ground except oregano, everything in pots.
How about a nice salad with a light dressing, steamed brussel sprouts and salmon for dinner. I sprinkle a little lemon juice, dill and tarragon on the salmon, dill on the brussel sprouts.
A steamer pot works well for vegetables.
