Summer anti-inflammatory menu ideas

Thought we could share some healthy menu ideas just because it's summer, fresh fruits and vegetables are aplenty, and who doesn't enjoy sitting down to a healthy, tasty meal that could help reduce inflammation.
I have started making Waldorf salad. My mother made it a lot, especially in the summer. And it's not expensive. Start with chopping an apple, sprinkle with lemon juice, add chopped celery, chopped walnuts. I use light mayo just enough to lightly coat the mixture. Could use plain yogurt, I like the light or fat free mayo. One of my favorite easy recipes, no measuring

We do not grill outside. We had a George Foreman tabletop grill years ago. I bought a replacement last year. I have been grilling chicken tenders. I gently pound them to uniform thickness, coat with a little oil, sprinkle with a dried herb mixture, grill 3 to 3 and a half minutes. My guys make chicken sandwiches with low salt, low fat cheese and light mayo or light ranch dressing. I usually pass on the bread and have the grilled chicken on a tossed salad. Pretty simple, not much prep.

I recently went to the local Farmer’s Market and bought some local, fresh produce. It made a delicious and simple meal of sautéed yellow squash with onions, sliced tomatoes and cucumbers with baby potatoes and grilled salmon. And, I’m now on a fresh cherry binge. I’m now craving them. Not pregnant though. Lol. I like to eat them with cherry greek yogurt.

Celia16, your veggies with grilled salmon sounds like a winner. I'm trying to eat salmon at least once a week. I bought cherries last week and froze some of them. Spread them on a lined cookie sheet in the freezer. Refreshing on a hot day!

I do not have a blender or food processor, had a blender once but thought the cleanup was tedious. Bought an immersion hand held blender yesterday. Last night I blended some low fat vanilla ice cream, frozen cherries, with oatmilk. Was very, very good. I know my ingredient choices at times could be better but keep moderation in mind if it's something I think I should be avoiding. Also keep modification in mind, substitute another ingredient. Gotta go with what's at hand and affordable. I am looking for smoothie recipes.

I bought a BlendJet and love that it is so easy to clean, just add some water, a couple of drops of dish soap, put the lid on and mix. Then it's empty, rinse and wipe off, basically just have to remove the lid and unscrew the container from the base and wipe it with a dry cloth or paper towel. I did purchase a larger size screw on jar so that I could make a double batch to share with my better half. 🙃 https://blendjet.com/products/blendjet-2.

I am back to this topic just because it seems easier to eat healthier this time of year. Don't have a garden per say but am growing herbs on a plant stand my husband made and have some vegetables in large pots. Hubby made very large cages because a lot of deer come to visit. We have cucumbers and sweet peppers already and a lot of cherry tomatoes on the way. We're eating salads practically every day. Have some kinda melon for dessert. Sauteing zucchini with shallots and fresh parsley. Have grilled frozen turkey burgers in the George Foreman, seems a good alternative to hamburgers. Made potato salad with canned small whole potatoes rinsed well, eliminate some of the egg yolks, fat reduced dressing, dill, ground mustard. The canned potatoes are actually tasty and less mess. I know white potatoes are not so good for anti inflammatory diet but I only make it once in awhile and eat in moderation.

Just cut up a 'summer kiss' melon. Looks like a cantelope but taste more resembles honeydew. Can only find summer and sugar melons this time of year where I live. The price was the same as cantelopes so worth trying. Something a little different.

Today I bought the biggest darkest best tasting cherries! Cherries are very anti-inflammatory and rich in antioxidant. Very abundant now and the price is right.
