New Favorite Snack
My husband is on dialysis and I'm stage 4. The very best thing we switched to was Monk Fruit Sweetener which can be used in cooking/baking. I just found something else I think we're going to enjoy - Organic Aussie Bites from Costco. They contain rolled oats, dried apricots, flax seeds, sunflower seeds, honey, coconut, quinoa, and chia seeds. I mostly watch the grams of sugar, which is 7 gms, although they are 130 calories each. Lots of good chew factor. Contains 270 mg of Omega 3, 2 grams of fiber, 0 trans fats. Protein 2 grams. I tore the label so can't check for phosphorus and potassium - sorry.

The label does not give any phosphorous info, but does say it is not a big source of potassium.

@gingerw @ldrlaw FYI, the free app called "Fooducate" shows 0 mg of potassium but 90mg of sodium, so watch your portions. It also shows 7g of sugar, and 4g of added sugar so diabetics be careful on portions. I can also vouch that this item is very tasty and nutritious but heavy on sugar.
I love using plant based Queso dip from Costco. Besides using it as a dip with raw veggies I also have used it in place of cheese in several recipes, like on top of stuffed peppers. It is really delicious!!
Ingredients: Cauliflower, Red bell peppers, Almonds, Water, Almond Butter, Apple cider vinegar, Red onions, lemon juice, garlic, sea salt, Nutritional yeast, Chia protein, Ground Cumin, Ground Tumeric, Cayenne pepper.
2 Tbsp has 45 calories, 0 cholesterol, 0 saturated fat, 0 tansfat, 0 added sugar, 190mg sodium, 1g total sugar and 2g protein.
Because it is just the 2 of us I freeze it into several smaller containers and freeze it. It freezes well and when it defrosts it is the same consistency as before freezing.
