I have enlisted myself as a donor, through my state's motor vehicle department. That way, I will be able to help as many people as possible, the balance to be cremated. When I lived in Southern California, I checked with UCLA about donation of my body after death, but they would only consider a whole body donation, not one where organs had been harvested.
@miloandlisa has a great idea to check with a nearby medical school to find out their guidelines. And look into medical research facilities.

I live in Rochester, so many people want to donate their bodies to Mayo. I went to a funeral home presentation about planning your funeral and they mentioned that you need a backup plan because sometime medical centers are at capacity and cannot accept additional bodies.
I am sure each large medical facility has their own criteria, but as an example, here is Mayo's,

Two options to find out what is available in your area:
- Contact larger medical facility that does research or is a teaching hospital
- Discuss with local funeral home
It is very generous to donate your body, but having the necessary paperwork done ahead time is essential.
I am donating mine to the Medical College of Wisconsin. Easy process. Gave them a phone call. They promptly mailed the forms. Be sure to inform your family about your decision.
