I eat a sourdough German rye bread that I buy In Oklahoma City when I visit my hometown. What have others found that have a low glycemic index or is low carb?

Sourdough has least effect on my blood sugar levels.

I remember my grandma baked a special loaf for my grandpa, who had diabetes. She always used whole wheat flour and would mix in a good amount of flax and chia seeds. It was a dense bread, and she always explained how extra fibers from the seeds are the key to making sugar go down.

Not all "keto" breads are really keto and may impact glucose. You have to experiment a bit. Base Culture (find at Whole Foods in fridgerated section) is very clean ingredients. A bit eggy,

Ezekiel Bread is more common and also clean ingredients, but a bit more carbs. Also found in grocery freezer

Test yourself 2 hours after eating. If combined with a protein (lunchmeat, eggs, pb, etc) the spike should lessen.

Years ago, I began a Vegan diet (suggested by my Endo Dr). The diet dropped my insulin dosage by 40 units from 50+ to 10+. Barlow's Bakery is one of the few bakeries around that make certain breads without dairy or eggs. The Caraway Rye is my favorite! Depending on your salt restrictions, they make two versions: with and without course salt topping. Occasionally, they will also do a lightly salt topping. It is good plain, toasted, peanut butter & jelly sandwiches, grilled vegan cheese. Roughly 15 carbs per slice.

There is a good website out of California called Hero Bread. Everything they make has no carbs or sugars in it. The taste is great!

If you've ever watched a documentary called "Secrets of the Blue Zone", about different parts of the world that have the highest concentration of centenarians, one of the common denominators was eating sour dough bread.

I have switched to eating the bread called “647 by Schmidt Old Tyme Bread. It has very few carbs and few sugars. It comes in different kinds of variety of types (white, multigrain, Italian, rye, potato, hoagie, wheat). You might want to try that.

My favorite is the organic whole wheat bread at Trader Joe's, sells for a big $2.99 here in Los Angeles. Seems to have minimal impacts on my blood glucose.

When I bring it home I keep it in the refrigerator, which may help. Carbs like pasta and rice and maybe some breads convert largely to "resistant starch" when refrigerated for 12+ hours or more, and I think that must happen here. I find it quite tasty, too, though one friend thought it was actually too sweet for him. There's a little honey and molasses in it.

Always try to get organic carbs (double-especially for oats/oatmeal) trying to avoid the glyphosate (aka "RoundUp") that may aggravate a number of other pre-existing conditions.

I agree! I originally found Hero bread on Amazon but too expensive with shipping . I tried it anyway and was very impressed. Not long afterward my Safeway store in Delaware had it hidden in their fresh bread and bakery department I alternate with Arnold’s Keto bread which is also good. Both brands come in plain or seeded varieties. Bread with high fiber that offsets the carbs is where it’s most helpful.
