Hello All,
I am really getting bored with eating primarily veggies so much. There must be some easy recipes out there and if you have any I would so appreciate anything you can suggest or even a book with easy recipes. I did purchase a renal diet cookbook, but most of the meals needed too many ingredients and I am NOT a cook per se. HELP!

My husband isn’t a vegetable eater but he does like spaghetti squash. Yesterday I bought two and today I split them, covered them with olive oil and they are in the oven right now covered in aluminum foil at 425 for about 20 minutes. You can then take off the aluminum foil and let them cook another 35 minutes or so. When they’re done you can let them cool, rewrap in foil and pop them right into the freezer as they are. So nice to have something different you can just heat and eat. Spaghetti squash is one of the lower potassium vegetables. Use them as noodles or as a side dish. Easy.

Initially, I thought DaVita was the only good source of recipes. This morning, I explored the Fresnius website and was pleased to find that they also have downloadable recipes. Check it out.

The hardest part of working with spaghetti squash is getting it cut in half....kind of tough. Might want to enlist help in doing that so you don't cut yourself!

Green Salt - we just ordered from Amazon. It has half the sodium and it doesn't look like the potassium in it presents an obstacle. Even if you use a little bit more, it certainly seems better than regular salt for us. We continue to be happy using Monk fruit with Erythritol as a sweetener.

CKD diet - If you like curry, here's a cure for boring chicken. Google Thespruceeats and then search for Baked Orange Marmalade Chicken Breasts. I didn't use salt and used sugar free orange marmalade. Other ingredients were pepper, lemon juice, dijon mustard, garlic, Worcestershire sauce and curry powder. Easy and turned out great. You can find a lot of info, recipes, etc., on the "PINTEREST" App.
I have saved quite an extensive collection using this.
