Hello All,
I am really getting bored with eating primarily veggies so much. There must be some easy recipes out there and if you have any I would so appreciate anything you can suggest or even a book with easy recipes. I did purchase a renal diet cookbook, but most of the meals needed too many ingredients and I am NOT a cook per se. HELP!

It took a little bit but I was able to find your recipes. Thank you! I've been trying to avoid potatoes but was told that if I do eat them, I should boil them, rinse and then boil again. Have you heard this?

...oh, recently blood test showed I am low on potassium and vit d and list of foods with high potassium, potatoes towards top...more than a banana, said had to eat seven bananas a day to meet daily quota. I didnt know some people have to cut down on potassium, J.

@lacy2 Potassium is one of the things we need to watch for, along with sodium, phosphorous, sugars, and calcium. Remember, everyone is different! For me, I was watching my potassium levels carefully, and then was put on heavy duty doses of furosemide. That particular medication can have a tendency to strip potassium in the body, and it did that to me. Now, I am on potassium supplements twice a day, and was also given the okay to indulge in orange juice and bananas!

@ldrlaw Leaching the potatoes will help bleed out potassium in them. I simply chose to be very careful about eating them. @kamama94 has told us of certain types of potatoes that have a naturally lower potassium value, but I cannot recall which type it was. Sorry.

I recently went on furosemide so will be interested to see if my potassium level changes. Thanks - again, I had NO idea.....

...gosh I get so caught up in my own list of to do and not to do things i forget or even have no idea how others are having such a hard time coping with various aspects of their illnesses diseases or conditions .... that must be very stressful juggling diets and medications.... !!

Before furosemide I limited my potassium intake severely and that's reflected in many of my renal-friendly recipes. One on furosemide, though, potassium levels dropped. The usual potassium supplement was too much and upset my stomach (I also have gastroparesis) so I was happy to add bananas and even V8 juice to my meal plan and supplement potassium levels by judiciously adding small amounts of the usually contraindicated salt substitute, potassium chloride (Nu-Salt) instead of sodium chloride (table salt.) Last few labs show good potassium level.

More about potassium (for coffee drinkers and for those who crave chocolate.) Please note, however, manufacturers may have changed amounts/values so read labels and if not enough info on label contact the company.

1 C reg coffee 2.4 cal 7.1 mg P 116 mg K 4.7 mg Na 0.3 Gm prtn
1 C decaf 0 cal 2.4 mg P 128 mg K 4.7 mg Na 0.2 Gm prtn
1 C half caff 2.4 cal 4.8 mg P 122 mg K 4.7 mg Na <0.3 Gm prtn

OK on occasional basis:
1 T Hershey’s cocoa (cacao) powder has 8 mg caffeine, 1 C coffee has 94 mg caffeine
1 T H cocoa 10 cal 25 mg P (2% DV) 97 mg K (2% DV) 0 mg Na <1 Gm prtn
