Anyone else gone gluten and dairy free to help improve symptoms

Hi,
It has been suggested to me and i have talked to people who havegone gluten and dairy free that has helped their symptoms. justlooking for anyone here who has and interested if it has made a difference? if it has could you share some menu's or give me some ideas? and how long did it take for you to see improvement? i have some general ideas on what to buy but looking for more before i head out. its been suggested to me because i have hypothyroidism which until recently has been out of whack, hyperplasia with possibilityof autoimmune gastritis, possible sjorgens syndrome and maybe lichen sclorus. im waiting on specialists to confirm but i have to wait for appointments which is so hard. its kind of like starting fresh. in 15 months of being sick i have gotten little help so im traveling 3 hours to boston where i can get better help its just hard waiting for these appointments.i am seeing a naturpath dr in a few weeks never been to one so not sure what to expect but i think he is better than who previously i have seen. sorry to ramble just hoping someone here relates tome and can help me out. thank you!

@jip499. One of the situations was medications not working for a particular diagnosis. I had been put on larger and larger doses of various medication over a 7 year period without having the issue rectified. Through detailed testing we found I had a blood/brain barrier issue that was easily resolved with a supplement. After that, a minimal dosage of meds resolved the issue.

What was the supplement

Readymade gluten free and dairy free foods.

Buy Gluten Free (GF) soy sauce.
Daiya fake cheeses, cheesecake, and pizzas.
Udi breads and rolls
Vitamin B-12 since you need real milk sugar to manufacture it on your own. Pills or injections. Injections are best since you can build up three years of storage in the liver and there isn't any issue with absorption. Pure sublingual B-!2 from Trader Joe's or health food store is second best.
Electric pressure cooker and air frier to make your own rice and fried foods using GF bread crumbs or GF panko crumbs.
Microwave to heat frozen foods and freshen GF baked goods (which are often sold frozen).
Ask your grocery store for a list of all their GF foods. Also buy online. There are ice cream cones, cakes, etc.

Never cheat on wheat. It can take a month or more for two pieces of bread to take out your intestinal villi, go after your brain, etc.

Waiters and waitresses don't always make the connection between flour and wheat. Some don't believe in it and will give you wrong answers. There are many countries with almost no wheat intolerance and there are others where 67% are genetically predisposed to wheat intolerance (like Ireland).

If you are going to a party or other unreliable food source make sure to eat first. You can enjoy food more if you aren't hungry.

Sauces are often made with wheat but can be made with corn starch, arrowroot, and other starches.

I think Celiac is silent but eosinophilic gastritis ( and other white blood cell-mediated autoimmunity) is painful. However, the two can be linked. You can have celiac for a time and then your body will call in the white blood cells to fight,

The autoimmune systems are like armies. There's one that is best for viruses, the one that's best for bacteria, and the one that washes away and disinfects chemically. If one doesn't win, your body calls in the others.

The ones that fight viruses have the best memories. The ones that fight bacteria are most likely to hurt or kill you. The washes away ones just make you miserable (Think tears, mucus. etc.

Try ‘Against the Grain’ brand instead of Udi.
Also ordering specific dietary baked goods from ‘ Gluten Free Creations’ in Phoenix AZ has been my lifesaver when avoiding dairy. They have vegan options which are dairy and egg free, you will thank me😋

Look specifically for a knowledgeable specialist. Find a smart nurse or doctor and have them tell you who is the best doctor for your problem. Smart nurses usually don't have a financial conflict of interest.
Some doctors think they own patients. Avoid these, they don't refer patients easily.

There is a test called ID30. You order the test and take it to a lab or clinic to have blood drawn to send back. It costs 300 and tests for thirty autoimmune diseases. It's a CLIA lab which is government certified for quality.

In Europe when a person is diagnosed with one autoimmune disease they are tested for many others. .Unfortunately, that is not commonly done in the US.

@bustrbrwn22 I want to write back about my visit to the naturopath
It was incredible. I spent over 2 hours with him going over everything. First he does think I have mast cell syndrome which someone mentioned to me but I knew no regular dr would believe. We talked about my levels b12, iron waiting to hear if he is gonna have me due iron Infusions in addition to b12 shots but he u like the rest of the Dr's said my levels were too low even though they are in range don't mean it's not a concern. Right now he put me on 2 supplements to help my gut and mast cell use he recommended aloe Vera gel
I am so thrilled. Also got labwork. He ordered the tests the last gi was suppose to do but didn't to confirm autoimmune gastritis or not. If you ever want to talk more private message me

I had a colonoscopy end of September. ( Diagnosed w/ lymphocytic Colitis) I asked my Gastro Doc about lymph drain massage and Cranial Sacral. (My stool was healthy until I stopped)
He said that he had heard good things but that it wasn't his practice. My massage therapist passed away last March. I believe she saved my life. I have been prescribed Budesonide. I'm definitely taking a natural approach to healing before prescriptions to treat symptoms and not the cause.
