Hi,

I usually use 400 for roasting beets...time does depend on size and sometimes you have to leave one in longer. I am thinking about 45 minutes is the average....take out and poke for tenderness but then put an extra layer of foil around the beet if putting back in the oven.....if not I invariably have leaking beet juice. I don’t take the skins off until I use them and then I use disposable plastic gloves. I have only cooked the red beets not the golden ones...don’t know why.

What do beets taste like, can you compare them to another food? I love pickled beets.
