Recipes, Food Tips, Healthy Eating & More
Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.
Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.
Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!
I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

Jake - PC (pre-Covid) we traveled - at least 20-25 thousand miles a year - plus volunteer activities kept me on the move 3-4 days a week when home. I checked odometers the other day, and we drove just 10,000 miles in 2020, including a 1500 mile trip from our Texas home to our Minnesota home. How much has changed in one year! I can't wait to pack the car and go again. We'll try a road trip in our new Subaru Outback when the day comes. In 7 months it has gone less than 1000 miles.
As for food, I made a trip to our local butcher/bakery/produce mart yesterday. Bonanza- they had fresh asparagus, cauliflower, Texas red grapefruit and other goodies on sale. Dinner last night was baked cauliflower with an au gratin coating, asparagus baked with olive oil and balsamic vinegar, and fruit salad. After I read the morning papers, I'll be putting on a pot of split pea soup and ham hocks, loaded with other veggies. Then out to shovel 4" of fluffy snow before the games. And a big pan of fudge brownies for dessert.
Have fun choosing your car. You'll be amazed by all the new safety features.

Has anyone sauteed carrots and their tops with a little olive oil?
Jake
@jakedduck1
I take the leaves off of carrots and sauté them in olive oil, garlic, s and p. I generally use vegetable greens and cook the same way. They need to be washed really well. I don’t normally sauté the carrots them selves. If you do, dice them so they will cook up faster. You can put your carrots in the toaster oven slice down the middle and cover with EVO and seasonings and roast them...400 is good.
Or just dice the carrots and separated leaves all in the same pan... cut up the leaves a bit so they are smaller. I love the taste of roasted or sautéed carrots...brings out their sweetness. It’s a quick dish too.
FL Mary who is making her mouthwatering bison meatloaf tonight with roasted cauliflower and asparagus.
@imallears
I'm looking forward to trying them. Preparing them is another matter.
Meatloaf sounds good to me but isn't it a little mundane for your sophisticated tastebuds?
Jake
@jakedduck1
It’s a sophisticated meatloaf...grass fed bison.....smart cows who are in the same family as domestic cows. Ate it as I watched the Tampa Bay Bucs score their way to the Super Bowl. Woot!
FL Mary
@imallears It's hard for a New Englander to watch Tom Brady help another team get to the Superbowl. I can't forgive him.

Hi,
Well, Brady was with the Patriots for 20 years and they wouldn’t agree to his contract demands and were willing to let him go. I can understand the need to move on. It is his livelihood. I understand he is getting a guarantee of $50 million. Insane money for sports and entertainment figures but that’s a whole other non medical conversation.
And the Bucs are a team so it’s not all just Brady. He’s getting older so we will see how well he holds up. You guys had him in his prime.
So now he is in a warmer climate for his older bones and he gets to eat our famous grouper sandwiches and key lime pie. He’ll probably open a restaurant if he hasn’t already. And he will be a retiree in the not too distant future and will need our warm climate (although he may hate practicing in the humidity).
We welcome him and, if the Bucs do beat KC ( heck of a good team), it won’t just be because of him.
FL Mary
Yes - yummy! And sometimes I top them with a little balsamic vinegar - nice contrast to the sweetness.

Oh, @jakedduck1, meatloaf mundane!!! No, no, no. Meatloaf is the supreme comfort food of all times~
@sueinmn
Love vinegars...I found a Butternut Squash seed Oil by Stony Brook in an oil and vinegar store in Winter Park that I am addicted to and sprinkle over vegetables and occasionally salads. There’s nothing like a good quality balsamic vinegar...very versatile and takes dishes to a whole other level. It should be a staple for all cooks.
