Recipes, Food Tips, Healthy Eating & More
Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.
Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.
Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!
I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

Here is a recipe for cranberry chicken I think I’d like but has loads of fat, sodium & sugar.
Is there any changes/substitutions to decrease those things? The only way I know to reduce those ingredients is to not make it which doesn’t really disappoint me.
4 skinless, boneless chicken breast halves
1- (16 ounce) bottles Catalina salad dressing
1-(14.5 ounce) cans whole berry cranberry sauce

@jakedduck1 You surprised me . That sounds good . I can only suggest that you can get some cranberry,s put them in a pot with water and half the normal sugar you would put on them cook them till you hear the skins pop stir them several times . As far as the dressing I dont think there is a low sugar Catalina dressing but you could add half of it and rest just water this will cut down on the sugar content When do you want me to come up?
@jakedduck1
Hi
@lioness is right about the dressing and I don’t think this particular recipe is a good option for you. If you goggle Healthy Cranberry Chicken for slow cookers there are recipes using chicken breasts, frozen cranberries, a cut up apple or unsweetened apple juice...all dumped in the cooker with a little flour or tapioca for thickening. It might be too sweet but maybe you could add some dried shallots (if you can get them)or just a cut up onion or some dried onion powder or onion flakes instead of the soup mix. You probable have to add some thyme and a tad of sugar and salt and doctor it up a little until it tastes ok to you. If the sauce is too watery, leave the lid off and let it reduce.
I would really stay away from the Catalina dressings. Frozen cranberries are a good option because you can add your own amount of sugar and they will give off some of the liquid you need in the cooking. Cherries or grapes are good too...I always have frozen cherries in my freezer. I know it will taste different because that dressing has a unique flavor but you can make something just as good.

Hello @jakedduck1,
The recipe does sound good. Some of the suggestions by @lioness and @imallears are good. I was thinking about substituting the Catalina dressing for a raspberry vinaigrette and the suggestion of @imallears of substituting the dry onion mix for fresh onions, shallots or minced dry onions is also good. You might need to spice it up a bit, maybe some Mrs. Dash or another spice of your choosing. If you try it, let me know how it turns out. I may try it myself😀
@jakedduck1 There is no way I would make that recipe with onion soup mix, that's so salty. I think some good options have been mentioned though with other dressings. Before I buy a new salad dressing I always check the sugar and sodium content. There are a couple of excellent raspberry ones, one being the Whole Foods brand. The Paul Newman brand isn't too bad either. There are others but I can't remember the names of them.
I have no idea if there are low-sugar cranberry jellies, I make my own. It's very easy and it is very tart. It does have sugar in it though. My son will literally eat it by the bowlful.
I try to stay away from many prepared foods, and if I do buy something that is prepared like salad dressing I always check the nutritional info. Prepared soups of any kind are basically not an option.
