Some of the members of the Gratitude Discussion Group were interested in having a place to share recipes and food ideas. I’m hoping that we can use this thread as a place to have that kind of discussion. I’d love to hear your ideas for quick meals, comfort food, healthy snacks, and more.

Personally, I’ve just been through a bad reaction to one of my medications that left me with a very queasy stomach. I would love to hear ideas – or recipes – that might be used when you need to get something on your stomach, but don’t want to overdo it.

Hopefully, this thread will even be a place where we can share recipes for special treats and yummy rewards. It doesn’t always have to be healthy!

I’d love to hear from members who have been part of other discussions AND from new members who have good ideas, recipes and food tips to share. I’m excited to see who might start us off here with an awesome food suggestion!

Oops, I thought I mentioned I was cooking on top of the stove but I see I forgot that little detail. Many years ago I fell on the countertop right next to my mom where she was washing dishes, had she left the kitchen for any reason and I fell just a couple of inches closer I could’ve drowned. She came to my rescue many times. Dangers abound when you have seizures.

Well it got done but I’m use to that. Better over done then under done I figure.
I had had some asparagus and brown rice.

@jakedduck1 im proud of you! It sounds like a delicious and healthy dinner.

My son and I tend to discuss our dinners when they are especially good so tonight he sent me a picture of dinner that his wife prepared and it had me drooling - lemon butter halibut, butternut squash au gratin, and asparagus. I made a delicious and very healthy chicken stew. For me, the best part of it is that it will be dinner again on Thursday!

JK, sounds yummie! I agree the best part of stews and casseroles is that they are better later! vbg Leftovers mean more food for later with less clean up and usually better flavors.

@jakedduck1 Sounds like you had a good healthy meal, then. Good for you, we knew you could do that every so often. Once this social isolation is over, maybe you can look in to cooking classes at your adult school in town.

Here’s my go-to rushing morning or lunch meal. Get a bowl, break a handful or so of corn chips into the bowl, grate in a bit of any cheese, scramble or poach an egg and toss it into the bowl, add salsa and crunch.

Boiled eggs can be tossed onto a salad, into sandwiches, into a nest in red sauce for over noodles or rice. Here’s the method to achieve perfect eggs!

Put 1 inch of water into a sauce pan, when the water boils put a steamer with as many eggs as you want to cook inside and place in the pan, pop on the lid. Set the timer for 10 min for tender boiled eggs, 8 min for firm whites and more tender yolks, 7 min for firm whites and yolks that are runny inside, 6 min for a soft boiled egg.
Take the eggs out of the pan, place in bowl with ice water for a moment if you want to eat them right away. They will peel like bananas! Leave in the water for 15 - 30 min to refrigerate the eggs for later. I use a pencil to mark an X on them, so I don’t forget they’re cooked.

@lizzy102 Thanks, this actually sounds delicious! For those of us who need to watch our sodium, there are unsalted tortilla chips available. I am so used to being low-sodium now that regular tortilla chips are too salty, particularly if you add salsa and cheese -- cheese is fairly salty by itself.
Generally, the only thing I eat now that requires salt is eggs but if they have cheese in them or on them, I do not need salt.

@parus That sounds good I too am using my dry ing. now did make lentil soup , Navy bean soup next week with ham . Did corn bread muffins yesterday am making cookies today . We have to get our recipe box out again and do as we did long ago.

sounds like the ideal time for me to come for a visit and if you get an overpowering desire to fix some pork and sauerkraut I’ll be there to cheer you on every step of the way.

I made some chicken and vegetables in the crockpot yesterday and was worried about it not getting done. I don’t know why I’ve certainly never undercooked anything before. I woke up at 3 AM and it was still cooking, 12 hours, Oh well at least I am used to over cooked food, not by choice it just seems to always turn out that way.
