Here’s my go-to rushing morning or lunch meal. Get a bowl, break a handful or so of corn chips into the bowl, grate in a bit of any cheese, scramble or poach an egg and toss it into the bowl, add salsa and crunch.

@lizzy102 Thanks, this actually sounds delicious! For those of us who need to watch our sodium, there are unsalted tortilla chips available. I am so used to being low-sodium now that regular tortilla chips are too salty, particularly if you add salsa and cheese -- cheese is fairly salty by itself.
Generally, the only thing I eat now that requires salt is eggs but if they have cheese in them or on them, I do not need salt.
